Extractions: Introduction to Cephalopods What group of animals can change color faster than a chameleon plus change texture and body shape, has three hearts pumping blue blood, is jet powered, has members in all oceans of the world - from the tropics to the poles - the intertidal to the abyss, has inspired legends and stories since recorded history, is thought to be the most intelligent of invertebrates and yet is related to animals such as clams and oysters, has members that can squeeze through the tiniest of cracks, is related to garden slugs yet has eyes and other senses that rival our own, and can make their own 'smoke screen' or 'decoys' out of ink? Cephalopods, the group in which scientists classify octopuses, squid, cuttlefish and nautiluses can do all these things and more. Octopuses, squids, cuttlefish and the chambered nautilus belong to class Cephalopoda, which means 'head foot'. Cephalopods are mollusks and therefore are related to bivalves (scallops, oysters, clams), gastropods (snails and slugs), scaphopoda (tusk shells), and polyplacophorans (chitons). Some of these mollusks, like the bivalves, don't even have a head, much less something large enough to be called a brain! Yet cephalopods have well developed senses and large brains and are thought to be the most intelligent of all invertebrates. Most mollusks are protected by a shell and many of them are not very mobile. Although the ancient nautilus has an external shell, the trend in cephalopods is to internalize and reduce the shell. The shell in cuttlefish, when present, is internal. The cuttlebone from cuttlefish is sold in many pet shops to supply calcium to birds. Squid also have a reduced internal shell called a pen. Octopuses lack a shell all together.

If you can't find fresh baby squid in your area, look for the smallest squid you can find, and be careful not to overcook them which will make them chewey. These squid, are first lightly grilled and then mixed with roasted tomatoes, olives, and fresh, crisp greens, are then topped with a drizzle of flavorful dressing that seems to pull all of the flavors together into a wonderful mix of flavors and textures. 1 Pound Baby Squid (Or The Smallest You Can Find) 1/4 Cup Olive Oil 2 Cups Small, Ripe Cherry Or Grape Tomatoes 1 Cup Tasty, Small Black Olives 2 Green Onions, Finely Chopped 3 Cups Mixed Fresh Greens (I Used Arugula In The Photo) Preheat the oven to 325 degrees. F. Combine the dressing ingredients and let sit to meld flavors. Toss the tomatoes in the rest of the olive oil not used for the squid, and sprinkle with salt and pepper. Roast for about 30 to 40 minutes, or until the tomatoes are soft, and the skins have split. Set aside to come to room temperature. Heat up the grill to medium high. Clean the squid, and cut into 2-3 inch pieces. Toss in some of the olive oil. Grill the squid for only about 1 minute to 1 1/2 minutes each side. Remove and let come to room temperature.

Extractions: Squid belong to the class Cephalopoda of the Phylum Mollusca . There are approximately 650 recognized species of cephalopods alive today and more than 10,000 fossil forms. Cephalopod translates literally into "head footed" which explains why squid, as well as the nautilus, cuttlefish and octopus among others, with their arms and tentacles attached directly to their heads, are so named. Spawning females create large, clear, almost neutrally-buoyant egg masses by releasing a gel-like substance with the fertilized eggs . The gel reacts with seawater to form a globular-shaped egg mass, up to I m in diameter, containing about 100,000 eggs of about I mm in diameter. Hatching time varies with temperature, but generally takes about two weeks. The larvae that emerge are roughly the same size as the eggs and are called "rhynchoteuthion" because of the distinctive proboscis on the head from which the tentacles will develop. After a period of growth and development, the larval squid becomes a juvenile about 6 mm in mantle length with adult features. By this time, the proboscis has split to form the two tentacles, and the other eight arms have grown larger.

Servings: Ingredients Preparation Frozen squid Fresh squid Hold the body of the squid with one hand and the head with the other; pull gently to separate. Remove the intestines and the quill, which is clear and plastic-like, of the fresh squid. Rinse the body inside-out, under cold running water; pat dry. Remove tentacles from head, just below the eyes; cut into individual pieces. Remove brownish or purplish outer skin from the body; cut the flesh into 1/4-inch [1-cm] rings. Mix together flour, salt and pepper on a sheet of wax paper. Toss rings and tentacles into flour mixture, until coated. Preheat oil to 350°F [180°C]; fry the squid pieces, about 6 at a time, saving tentacles until last.
