Extractions: Vitamin C, also called ascorbic acid, has the molecular formula of C H O . It is necessary in order for the immune systems of our bodies to function accurately. It is also essential to the formation of collagen, intercellular material, bones, teeth, and it aids in the healing of wounds. The vitamin also maintains the elasticity of skin, helps absorb iron, and improves resistance to infection. Vitamin C can be synthesized through production of glucose, or it can be extracted from plant sources including rose hips, blackcurrant, and citrus fruits. Vitamin C is famous for its treatment of scurvy, but perhaps more significantly, Vitamin C may prevent the onset and development of cancer (1). This vitamin is vital to almost every body organ and process. As Dr. Emanuel Cheraskin, Dr. Ringsdorf, and Dr. Sisley quote in their article The Vitamin C Connection: "There are more than ten thousand published scientific papers that make it quite clear that there is not one body process (such as what goes on inside cells or tissues) and not one disease or syndrome (from the common cold to leprosy) that is not influenced - directly or indirectly - by vitamin C (2)." The importance of vitamin C to the human body cannot be stressed enough. In 1934, Walter Norman Haworth's monumental discovery opened the door to the artificial production of vitamin C. Haworth's discovery proved the chemical structure of the vitamin C compound and various carbohydrates. As a result of this research, Haworth won half of the Nobel Prize in Chemistry in 1937 (3).

He was born exactly 120 years ago, and he died exactly 53 years ago. Walter Norman Haworth was born in Chorley, Lancashire, England on March 19, 1883. After he finished school at the age of fourteen, he took a job at the linoleum factory his father ran. Unhappy with such work, Haworth decided to attend university to study chemistry despite the extreme disapproval of his parents. He entered college in 1903 and by 1910 had the first of his two doctorates. With the exception of some chemical production he did for the military during the First World War, Haworth spent the bulk of his early career researching carbohydrates. His work made it possible to figure out the structure of carbohydrate molecules, and he found the structures of such important carbohydrates as glucose, lactose and sucrose. His techniques are still commonly used today. Haworth's methods allowed him to figure out the molecular structure of hexuronic acid better known as vitamin C, the substance needed to stave off scurvy. Once Haworth knew the structure of vitamin C, he was able to synthesize it in his laboratory. This was the first time anyone had artificially made a vitamin, and the discovery helped reduce the price of the important substance.

Extractions: Actually, how long have people been active in science? The answer is the same for both women and men as long as we have been human. One of the defining marks of humanity is our ability to affect and predict our environment. Science - the creation of structure for our world - technology - the use of structure in our world - and mathematics - the common language of structure - all have been part of our human progress, through every step of our path to the present. Women and men together have researched and solved each emerging need.
