History
During the Reformation in 16th Century Europe, Luther and Calvin promoted the concepts of individual freedom and the priesthood of all believers. In what has been called "the radical reformation" , some religious reformers took these beliefs to a logical conclusion; they preached that the believer should separate themselves from all secular activities. One of the largest groups, the Anabaptists promoted: baptism during adulthood after confession of faith, instead of during infancy the total separation of religion from and state worship services in the home rather than at church The religious movements that they founded are called "free churches" as contrasted to the state churches which were normal for the time. Their groups were simple associations of adult Christians. Most groups were wiped out in wars or programs of genocide which were organized by various governments, and both the main-line Protestant and Roman Catholic churches. The Mennonites are named after Menno Simons (1496-1561), a Dutch Anabaptist leader. They were severely persecuted and fled to Switzerland and other more remote areas of Europe. The Amish began as a split-off sect of the Swiss Mennonites during the late 17th century. Their founder was Jacob Amman, who based his beliefs and practices on the writings of Simons and on the 1632 Mennonite

They opposed the union of church and state and infant baptism. They baptized people only as adults at about age l8. Adult baptism was a crime in the l6th century. Therefore, the Amish come from an impressive list of martyrs. They were put in sacks and thrown into rivers in Europe. There are no Amish left in Europe; The Amish were saved from extinction by William Penn who granted a haven from religious persecution in America. Since early colonial days the Amish have lived in the United States preserving their distinctive culture, dress, language and religion in peace and prosperity. A few years ago they were again accused of crimes failing to have their children attend school with state certified teachers or failure to send them beyond the eighth grade. The Amish In Northern Indiana
Goshen College lies between two of the most prominent Amish settlements in the mid-west: Skirted on the east by the third largest Amish settlement in America, Goshen students rub shoulders with this unique otherworldly community with relative ease and comfort. Highlighted by the newly-completed Shipshewana visitor center, Menno Hof , the community attracts more than a million visitors each year. Smaller in numbers and territorial size is the Amish community southwest of the college. It is equally rich in Amish life and culture and includes the converted farmstead, Amish Acres, sporting a new red round barn-theatre that gives daily performances of "Plain & Fancy," and features a popular restaurant along with entertainment. The Amish broke away from the Mennonites nearly 300 years ago when differences arose among Anabaptist leaders in Switzerland and Alsace. Seeking a stricter lifestyle including the Streng Meidung , or shunning, which includes the social avoidance of erring church members. Tensions ran high and eventually in 1693, a complete split occurred. Forty years later, many Amish responded to William Penn's invitation to come to America and settle the land. No Amish now remain in Europe. Currently there are approximately 145,000 Amish men, women and children living in 22 states in the United States and in Ontario, Canada. There are 220 Amish settlements accommodating over 900 geographically determined church districts. Persistence of tradition and slowness to modernize have characterized the Amish as they have steadily sought to carve out their lifestyle which is a culture apart from the world. Even at the dawn of the 21st century, Amish are characterized as humble folkhard working, neighborly, otherwordly, agrarian, God-fearing, ethnically homogenouswho live the simple life and live it well.

The Amish and the World Wide Web ! What a peculiar combination, old-fashioned quiet people and the most recent and as yet ungoverned, communication device. But there is an objective behind the aberration. The purpose of the page is:
  • to educate the general public about this particular ethnic group.
  • to provide information to local officials, business people and others who have contact with the Amish, particularly if these contacts began in the recent past.
  • to bring together in one site selected material found on the Web pertaining to the Amish.
  • to highlight the positive influences of diverse ethnic groups in our country. Lee Zook and Kyle White have worked with a variety of Amish groups when they had conflicts with their neighbors. Often these conflicts occur because the Amish avoid many of the modern conveniences and technologies that most post-modern people take for granted. They do so because of their religious beliefs and their tradition. These two items, religious beliefs and traditions, are so tightly interwoven that it is difficult to separate one from the other. As in many religions, for the Amish, belief to some extent flows from tradition.
    When confronted with some law or regulation that does not fit their religious belief, Amish sometimes ignore the law. In some cases, these conflicts escalate until Amish find themselves in court defending their actions. Often court cases have been argued using the basic tenants of the

    Who are the Amish? Are they the same as the Pennsylvania Dutch?
    The Amish are a religious group who live in settlements in 22 states and Ontario, Canada. The oldest group of Old Order Amish, about 16-18,000 people live in Lancaster County, Pennsylvania. The Amish stress humility, family and community, and separation from the world.
    Although Lancaster Amish are Pennsylvania Dutch, all Pennsylvania Dutch are not Amish. The Pennsylvania Dutch are natives of Central Pennsylvania, particularly Lancaster and its surrounding counties. Unlike the Amish, they are not all one religion. Instead, their common bond is a mainly German background (Pennsylvania Dutch is actually Pennsylvania Deutsch, or German). They also have Welsh, English, Scottish, Swiss, and French ancestry.

    There was a small Amish community near where my Grandmother lived, and she would often buy baked goods from them, and collect some of their recipes. I visited an Amish home with her and Mom, once. The starkness of the woman's kitchen made me feel like I had stepped back in time. There was a distinct, "depression-era" shanty feel about the place, but it also felt unusually "home-like" at the same time. I have always been impressed with the simplicity of these people. Here are some things to keep in mind with reference to these recipes:
    • Vegetable shortening may be substituted for lard
    • Sweet milk = regular milk (whatever you have in your refrigerator for drinking, though I would avoid using skim milk.)
    • Top milk = whole milk
    • A moderate oven = usually, 350 degrees

Amish Country browsers have requested the following recipes: *Each year at Christmas my paternal grandmother would make a candy from black walnuts. The walnuts were in a brittle material that was dark brown, translucent, and looked like a hardened syrup, It was not the brown, opaque of regular peanut brittle. She would give each of we grandchilren a box for Christmas. It was great. But after she died and we went through all of her notes and recipes we could find nothing on the walnut brittle. However, the community I grew up in was heavily Mennonite Old Order. She was connected to the group somehow, even though not practicing. It is possible she got the recipe from some Amish or Mennonite background. Would appreciate anything anyone would tell me that might help with my search. Bob Stoltz Saundra is looking for a recipe that she saw in an Amish Cookbook. It was a layer dessert. A cream cheese crust almost of a cheesecake consistency,with crushed pineapples on top.     ... Nutritional Facts Amish Chestnut Stuffing

    1 pound fresh chestnuts
    1/2 cup melted butter or margarine 4 cups bread crumbs 2 well beaten eggs 1/2 cup chopped celery 1 1/2 teaspoon salt 4 teaspoon poultry seasoning 1/2 cup chopped celery Wash chestnuts, make two slits on each shell, and bake for 15 minutes at 475 degrees. Shell, boil in water to cover for 20 minutes. Chop fine. Mix with the melted butter, bread, crumbs, salt, poultry seasoning, egg and celery. Toss well. Yields enough to stuff a 18 pound bird. Shelling Chestnuts Pan/Oven Method Cut a one inch gash on flat side of nut and put in a skillet, allowing 1/2 teaspoon of butter to each cup of chestnuts. Shake over heat until butter is melted. Put in oven and let stand for 5 minutes. Remove from oven and with a small knife take off shells. By this method shelling and blanching are accomplished at the same time, as the inside skins will adhere to the outer shells.
