Turkey offers the traveler an opportunity to try the exotic after a familiar trip to Europe. The friendly, courteous Turkish people have been hosting visitors in one form or another for centuries. "Go for the history, but stay for the food," is often said. Turkey is a unique republic located on the eastern end of the Mediterranean. While most of her citizens are Islamic, the government of Turkey is both democratic and secular. Turkey has always been the meeting point for European and Middle Eastern neighbors, becoming an important link between east and west. Consequently, her customs and cuisine are modern, and at the same time historic. Turkey has often been called the crossroads of Europe. Over the centuries the Hittites, Seljuks, Persians, Greeks and Romans have ruled the area. The Turkish Diet It was during the rise of the Ottoman Empire, (1453-1909) which at its height (1453-1650) extended into Eastern Europe, Egypt, and Inner Asia, that the genius of Turkish cooking had its greatest influence. Centuries of Ottoman empire rule helped to spread Turkish cuisine and ingredients into Eastern Europe and throughout the Middle East. Many well-known recipes show an influence from Turkish cuisine: yogurt salads, fish in olive oil, stuffed vegetables and vine leaves, and syrupy filo dough desserts.

Quince is a fruit that is much revered in the history as well as daily life of Greek and Turkish cooking. The quince is native to Persia but has been cultivated since ancient times throughout Asia, parts of Europe and Africa. This fruit appears to be an overgrown misshapen pear with a slightly woolly exterior. It is usually either cooked or turned into preserves as it is very hard and has a sour taste. But what makes it revered is its wonderful perfumed taste and aroma. This aroma has been chronicled throughout history from the time of Adam and Eve and throughout Greek mythology, where it was known as their "golden apple." Since the 1990s, eating varieties of quince have been cultivated. Among them is the apple quince, which has a sweeter taste. Another property of this fruit is its skin, which contains pectin, a natural thickening agent. This is why quince is a natural for preserves and marmalades. My idea with this dessert soup is to capture that wonderful perfume of the fruit and to add a spiced undertone to give it a real Middle Eastern exotic quality.

Greek and Turkish cooking is a very homespun affair. From my first trip to Greece, I remember the island of Santorini. Angie and I stopped at a small taverna for lunch and were immediately led to the kitchen. I didn't quite understand until our host started lifting the lids on various simmering pots so we could choose what to order - a very friendly and welcoming custom. Along with the simmering stews there were various crisp and moist meat and vegetable pies that were made with phyllo. One of my favorite phyllo pies has always been kreatopita. Kreatopita is a ground beef or lamb mixture that has been well spiced and usually mixed with cheese, wrapped in olive oil-coated phyllo and baked to a delicate crispness. This is an original "pita," meaning "closed pie." You will find it all over Greece in different variations but the original is said to come from the Ionian island of Cephalonia and is eaten in celebration of the religious holiday Ascension Day. Although, as origins can be fuzzy in many cuisines, the Island of Crete has a similar claim to the original.

Appetizers Soups Salads Main ... Main Dishes Turkey Tetrazzini Turkey Tetrazzini Submitted by: Robin This is one of my favorite ways to use leftover turkey after the holidays. It's also good with chicken. 2 tbs. vegetable oil
1 shallot, chopped
1 garlic clove, minced
3 tbs. chopped parsley
2 bay leaves
Grated lemon zest
1 lb. pasta (I prefer thinner pasta like Cappelini)
3 Cups turkey cut into bitesize pieces
4 tbs. butter
1/4 cup flour
3 tbs. onion minced 1/2 lb. fresh mushrooms, sliced 2 1/2 cups chicken broth 1 1/2 cup dry white wine (I like Madeira) 1 tsp. salt 1 tsp. pepper 1 tsp. celery salt 1/2 cups shredded parmesan cheese 1/2 cups sliced almonds 1/2 cup bread crumbs 1 egg (optional) 1 cup shredded cheddar cheese (optional) Cook pasta until tender. Warm chicken broth. Melt butter and stir in flour to make a roux (be sure to stir it constantly, don't take your eyes off it! Trust me!) Add warm chicken broth to roux and continue to stir for about five minutes until the sauce thickens. Add milk, mushroom mixture and turkey (you can also add an egg for binding). Cook till heated. Pour mixture over pasta in a 9 x 13" baking pan and mix together. I also like to mix in a little cheddar cheese at this point. Sprinkle the top of the casserole with parmesan cheese, bread crumbs and slivered almonds. Bake in 350 degree over for 20-30 minutes until a crust has form and it starts to bubble.
