Objectives
This undergraduate program offers specialized professional education for individuals preparing for a career in clinical dietetics. The profession requires skill in the application of the concepts of nutrition as well as knowledge of the basic and behavioral sciences. The goal of the program is to prepare well-qualified clinical-dietetic practitioners to provide medical nutrition therapy throughout the health-care delivery system. Dietitians assess nutritional status and implement nutrition-therapy plans for the treatment of disease and the promotion of health. This program includes the study of nutrition throughout the life cycle, from birth to advanced age. Students also are offered the opportunity to study extensively the role of nutrition in the causes and treatment of a variety of medical disorders. Graduates of the program may assume positions in acute or ambulatory settings in such areas as cardiac rehabilitation, pediatrics, diabetes, nutritional support, trauma, and cancer. Unique opportunities are available for graduates in home-health agencies, fitness and wellness programs, schools, community-health programs, and industry.

This resource list is a compilation of English language online food and nutrition education programs that are available at institutions in the United States. Opinions expressed in the programs do not necessarily reflect the views of the U.S. Department of Agriculture. Contact information is provided for Web sites and organizations. An online education program is defined as Internet-based and relying on Internet communication media such as streaming audio and video files, real-time conferencing, chat etc. The format of some of the courses mentioned in this resource list are a blend o f print, audio/video, and web-enhanced materials. Other computer-based or print-based continuing education programs such as courses on CD-ROM or self-study books were excluded since information on these courses is more readily available through other information services. Health Programs
The Health Programs of CACST provide comprehensive services through community health center. The Rural Health Initiative (RHI)Program provides primary ambulatory care for children and adults who pay for services on a sliding-fee scale according to income. It provides for medical, dental, podiatric, and family planning services. Immunizations, health education, and parenting are also provided. Third-party coverage is accepted including Medicaid and Medicare assignment. However, no one is denied services due to inablitiy to pay. Due to designation as a Federally Qualified Health Center (FQHC), the Medicare deductible is waived and Medicare services and the copay are subject to the sliding-fee scale adjustment. The full range of maternity services are provided to women in the area through the CACST Maternity Clinic which is the only source of such services in the area. The Maternal and Child Health (MCH) Program monitors the health of the mother and her infant for a period of one year. It coordinates with other social services organizations and community agencies. Care includes diagnosis, follow-up, and case management which also includes certification for medicaid eligibility. Women, Infants, and Children (WIC) Program

Public schools should provide appealing and nutritional breakfasts and lunches to elementary and secondary students in an economical manner. Nutritional food choices are critical to the success of any school district's nutrition services program because good dietary habits are clearly linked to high academic performance and lifelong individual and group satisfaction. BACKGROUND In Managing Child Nutrition Programs: Leadership for Excellence , authors Josephine Martin and Martha T. Conklin maintain that child nutrition programs, especially in sizeable school districts, resemble very large businesses in that they provide an abundance of managerial, financial, human resources and health promotion opportunities and challenges. In 1998, the federal budget for child nutrition programs exceeded $5 billion, with nearly 95,000 schools participating in the federal lunch program and approximately 31,000 participating in federal breakfast programs. Nutrition services is a dynamic process undergoing constant change as a result of evolving federal, state, and local regulatory processes; advances in technology; demographic changes; societal and community expectations; new food product availability; participation in federal food commodities programs; strategies to maintain or increase the number of students engaged in educational processes; competition from vending and other food venues on school premises; "open" or "closed" lunch periods in high schools; and the changing needs and tastes of students as both food consumers and customers.

Back to AUSTIN (April 13) - Federal and state officials and representatives from two major Texas universities signed an agreement today signifying their commitment to work together to improve the health, nutrition and living conditions of the residents of Texas' colonias. The signing ceremony is a celebration of accomplishments made by Partnership for Change, a team comprised of federal, state and university staff committed to helping improve nutrition, health and living conditions in the colonias. Too, it is a show of commitment from top state and federal leadership to support the team in the future. Partnership for Change, formed in August 1998, has been studying the effectiveness of nutrition assistance programs, such as food stamps, school meals programs, USDA commodity programs, child care and summer feeding programs, and WIC, the women, infants and children's nutrition program, in the colonias of the Rio Grande Valley. A pilot project has been focused on Webb and Willacy Counties, but the group plans to expand its efforts to other Valley counties. Physical Activity and Nutrition
Updated February 2003 Physical inactivity and unhealthy eating are behaviors that have an impact on health. Together, they are responsible for at least 300,000 preventable deaths each year. Regular physical activity provides short-term benefits, such as reducing symptoms of anxiety and depression, and reduces long-term risks for disability and premature death. Despite the proven benefits of being physically active, more than 60 percent of American adults do not engage in levels of physical activity necessary to provide health benefits ( see postcard ). Good nutrition lowers a person's risk for many chronic diseases. However, a considerable gap remains between recommended dietary patterns and what Americans actually eat. Only about one-fourth of U.S. adults eat the recommended five or more servings of fruits and vegetables each day. Chronic Diseases in the United States
  • Chronic diseases account for 70 percent of all deaths in the United States and the medical care costs account for more than 60 percent of the nation's medical care costs. More than 90 million Americans live with chronic illnesses. Chronic diseases are long-term illnesses that are rarely cured completely. Most chronic diseases can be prevented or improved by avoiding risky behaviors such as smoking and poor nutrition, or by increasing physical activity and obtaining life-saving screening services. Asthma affects more than 15 million Americans. The projected cost of asthma in this country for the year 2000 was $14.5 billion.

Suzanne M. Biermann Deputy Under Secretary for Food, Nutrition, and Consumer Services
U.S. Department of Agriculture Suzanne Biermann
was named Deputy Under Secretary for Food, Nutrition, and Consumer Services on November 20, 2001. In that position, she will provide policy direction for the nation’s food assistance programs as well as nutrition policy and promotion. Ms. Biermann specializes in program evaluation and management, policy analysis, strategic planning, and organizational development. From 1998 until she joined USDA, Ms. Biermann served as the deputy commissioner of planning, evaluation and project management for the Texas Department of Human Services. She was responsible for implementing an integrated human services agenda that laid out agency priorities, key policy directions, strategic and operational plans, and agency constraints and challenges. During her service in that position, she was the executive sponsor of a software development project to replace the automation used by over 12,000 field workers with a one-stop system for determining client eligibility for temporary cash assistance, food stamps and nutrition programs, health care coverage, and community-based programs for the elderly and people with disabilities. From 1995 to 1998, Ms. Biermann worked for the Washington State Department of Social and Health Services. She served as the special assistant to the assistant secretary of the Economics Services Administration where she supported the administration and regulatory development of the State’s public assistance, welfare-to-work, and child support enforcement programs. Prior to this position, Ms. Biermann worked within the Office of Quality Control which ensured program integrity and accuracy of benefit issuances.

Youth and Cancer Prevention
Unhealthy habits, such as eating too much fat, using spit tobacco, not eating fruits and vegetables, or not exercising, can begin at an early age. When children become teenagers, they may experiment with behaviors that pose cancer risks, such as cigarette smoking and excessive consumption of alcoholic beverages. There is evidence that patterns set in adolescence regarding physical activity, food preferences, and smoking continue into adult years. The formative years of youth offer many opportunities to influence the development of lifelong skills and healthy behaviors needed for cancer prevention and risk reduction. Children who have good health knowledge and skills also achieve a better lifelong health status. Healthy children and adolescents are able to perform more effectively in school, and they miss fewer days from school due to illness.

Comprehensive school health education is a process for teaching children about health and encouraging healthy behaviors through a planned,sequential program from kindergarten through the 12th grade.
