    We are pleased to announce the availability of the long awaited resource manual, The Texas Guide to School Health Programs. This information is intended to enhance the educational process by providing guidance and resources for school administrators, school nurses, teachers and other staff members in the development, implementation, and evaluation of school health programs. This material replaces the previous manual School Nurse Handbook for the School Health Program, last published in 1989 by the Texas Education Agency. We are seeking funding to have this manual published as a book, but until then it will be available in its entirety here on the School Health Program website, or on CD ROM.

    NUTRITION
    Purpose The purpose of Public Health Nutrition Programs is to improve the health of individuals residing within Public Health Region 1. The programs generate community-based efforts to promote optional nutritional health, prevent nutrition-related conditions and diseases, and to assure food assistance and nutrition education to those who have been found to be vulnerable to the effects of malnutrition or chronic diseases with nutritional status as an underlying factor. Public Health Nutrition services are conducted in a variety of settings, including public agencies, private organizations, providers and individuals. Services are prioritized to assure that the highest priority nutrition related needs of the community are addressed.

    • Providing training for health and other professionals in the area of nutrition for Texas Health Steps and other programs Programs for schools aimed at both students and staff to have impact on the nutritional status of the school Collection of data and development of strategies to promote health ( School Based Nutrition Monitoring ) and other surveillance activities Provide technical assistance to schools and communities to promote health through sound nutritional practices Assisting schools and communities in identifying resources to address nutritional issues

During year one, the primary objective will be to identify and profile a target population, initially focusing upon families with school-aged children, in order to plan and implement effective targeted nutrition and physical activity interventions in the years 2 and 3.     Implementing a Coordinated School Health Program: One Local School’s Success
    Public Health Problem
    Florida schools serve 2.7 million students, approximately 20% of whom live in poverty. In 1999, 81% of Florida’s youth (aged 10–24 years) did not attend daily physical education classes, 78% did not participate in any moderate physical activity, 74% did not eat the recommended five servings of fruits and vegetables per day, and about half (48%) consumed alcohol during the month preceding survey or had engaged in sexual intercourse (50%). Evidence That Prevention Works
    Health education in schools can reduce the prevalence of health risk behaviors among young people. For example, health education resulted in a 37% reduction in the onset of smoking among 7th graders. In addition, obese girls in the 6th and 8th grades lost weight through a program at school, and students who attended a school-based life-skills training program were less likely than other students to smoke or use alcohol or marijuana.

    Texas Woman’s University Texas Woman’s University has signed a memorandum of agreement with the Universidad Autonoma School of Public Health and Nutrition in Monterrey, Mexico and will offer a graduate nutrition class there in July. The agreement, which focuses on the areas of nutrition, food sciences and public health, proposes an exchange of faculty and students between institutions for courses and research, and proposes organizing joint symposiums, conferences, seminars and continuing education programs. The Universidad Autonoma is a public university and its School of Public Health and Nutrition has approximately 586 undergraduate and 35 master’s-level students. "This agreement opens educational and cultural opportunities to both Texas Woman’s University and Universidad Autonoma students," said TWU Chancellor and President Dr. Ann Stuart. "This exchange of knowledge and ideas can only benefit the citizens of Texas and Mexico." The first graduate-level course to be taught under the agreement is "Diet, Nutrition and Public Health Programs in Mexico," July 13 through 21 in Monterrey, Mexico for three credit hours. The course will be taught by Dr. Victorine Imrhan, associate professor of nutrition and food science at TWU, and Elizabeth Solis, former dean of the School of Public Health and Nutrition, who is now a nutrition student at TWU pursuing a Ph.D.

    Dr. Sue McPherson (left) and Beth Calavito Siu, a graduate research assistant and a staff member of the Human Nutrition Center at UT-H School of Public Health, review food pyramids from around the world. After R. Sue McPherson, Ph.D., wrapped up her pre-med studies at Texas Tech in Lubbock, she headed straight for Houston and The University of Texas-Houston Health Science Center. Her intention was to apply for medical school. "But I went into the wrong building - the UT-Houston School of Public Health (SPH) - and my career path changed," she says today. "I have always been interested in how nutrition relates to disease. When I read the SPH catalog section on epidemiology, I knew this was my field because that is exactly what the discipline of epidemiology seeks to find." Dr. McPherson, associate professor of epidemiology and director of the Human Nutrition Center at SPH, says, "While we know that what we eat is neither the direct cause nor the sole preventative for disease, we also know they are very much intertwined." The Center focuses upon chronic diseases and the part nutrition may play in them." Children, their lifestyles and cardiovascular risk, and cancer in people of all ages, are of particular interest to Dr. McPherson. "We've been involved in trying to understand what children eat and what kinds of physical activity they do today. The point is to see what sorts of behaviors can be intervened upon and what changes can actually be brought about.

    WHY A RESIDENCY PROGRAM AT THE DEPARTMENT? P
    hysicians who continue their post graduate training through a year of primary care medicine (PGY-1), obtain and MPH or equivalent degree (PGY-2) and serve a year of 'practicum" in the field of public health with and accredited program (PGY-3) can become eligible to take the American Board exam in Preventive Medicine. Such physicians are in demand as Directors of local, regional and State health departments, as well as leaders in other preventive and public health roles. I t was with the intent to train the future leaders of Texas public health that the Department embarked on its program of residency training for the "practicum year". Because the program is supported by State tax dollars, the training is intended for those physicians who plan to remain in public health practice in Texas after completion of the residency program.

    The Masters and Doctoral programs in Nutrition allow emphasis in the broad fields of basic and applied animal and human nutrition. Candidates may perform research in the areas of nutritional biochemistry and molecular biology, animal nutrition, clinical nutrition, and community or international nutrition. Studies in animal nutrition may be related to animal agriculture or may be fundamental in nature. Human or domestic animal nutrition specializations can be obtained in physiology, immunology, biochemistry, molecular and cell biology, applied nutrition, and clinical nutrition. Graduate level course instruction and laboratory training may be obtained in such subdisciplines as cell biology, molecular biology, immunology, reproductive physiology, exercise physiology, sociology, and philosophy.
