Swedish Pancakes

20 pancakes
2 cups milk
eggs

1 tablespoon vegetable oil
1 1/2 cups all-purpose flour
3 tablespoons sugar 1/4 teaspoon salt Lingonberries or raspberries Seedless raspberry jam or fruit spread, warmed Whipped topping In a blender, combine the first six ingredients. Cover and process until blended. Heat a lightly greased 8-in. nonstick skillet; pour 1/4 cup batter into center of skillet. Lift and tilt pan to evenly coat bottom. Cook until top appears dry; turn and cook 15-20 seconds longer. Repeat with remaining batter, adding oil to skillet as needed. Stack pancakes with waxed paper or paper towels in between. Reheat in the microwave if desired. Fold pancakes into quarters; serve with berries, raspberry jam and whipped topping. Swedish Crab Crêpes
Nice Swedish recipe. As a first course this will do for 6, as a main course for 3 to 4 persons.
for the crêpes
  • 3 eggs
  • 170gr/6oz plain flour
  • pinch of salt
  • 200ml/7,5 floz/0,8 cup of light cream/cooking cream
  • 400ml/14 floz/1,5 cup of milk
  • 50gr/2 oz/3 large tbsp melted butter
Beat the eggs loose and mix in the flour, the salt and next the cream and the milk, bit by bit. Carefulley melt the butter and mix it in with the dough . Give the dough a short rest. Next bake 12 small crepes from 3-4(us) tbsp dough each. Pile them up and keep them warm with some alluminum foil.
Crab filling
The original Swedish recipe calls for tinned crab, but I use Surimi or crabsticks.
  • 350gr/13oz of crabsticks or surimi
  • 2 tbsp of fresh chopped dill
  • 50gr/2 oz/3 large tbsp melted butter
  • 2 tbsp plain flour(2,5 for the US)
  • 125ml/4,5 floz/0,5 cup of cream
  • 1 egg yolk, beaten
  • 1 glass of white wine
  • 1 tbsp lemon juice(1,5 for the US)
  • 100gr/4 oz of grated cheese(cheddar)
  • 2 more tbsp of butter(2,5 for the US)
Break the surimi or crabsticks in small pieces and mix them with the dill. Let it rest a little in the fridge.

A few Words from the Swedish Chef Justin Wilson shows, and Julia , and sometimes come up with a concoction that was a combination of the videos, his own flair, and some guys from the Barber Shop. It always came out good though. We weren't any of us wanting for food. I remember many times we would sit out in the back yard watching the roast, or whatever, cook on the grill with him basting or just taking a look at it every hour or two until late in the night. Then it would be the special meal of the next day... or sometimes as soon as they were done if we had drooled over it long enough to ignite an appetite. Of course, once I became a teenager, I learned to appreciate the "finer" meals of fast food - nothing was better than a hamburger and fries!
These days I'm following The DASH Diet (Dietary Apporaches to Stop Hypertension) from the Mayo Clinic. I've been on it about 3 months, and it is working for me. My blood pressure went from the 190s and 200s over 99 and 110s, for about 5 years, with none of the 7 BP pills a day helping much, to now be 107 over 70! (November 19, 2000) If you have high blood pressure, I really recommend you try it.

Swedish Meat Balls Recipe
  • 2 lb. ground beef
  • 2 eggs
  • 2/3 cup milk
  • 2 Tbsp parsley
  • 1/2 cup oatmeal
  • 1 onion, chopped small
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp nutmeg
  • 1/2 cup beef broth
Mix together the beef, eggs, milk, parsley, oatmeal, onion, salt pepper, and nutmeg. Shape into small balls. Bake on try in a 450 degree oven for about 15 minutes. Put the meat balls into slow cooker/Crock Pot, and pour beef broth over top. Cover and cook on low for 1-1/2 hours. Yummy if served with yogurt on top. Source: Received from a friend Happy cooking!

Smörgåsbord Favorite
Swedish meatballs are probably one of the best-known Swedish cooking specialties, definitely a necessity on the smörgåsbord. Norway, Denmark and Finland have their own versions, too. Every Scandinavian cookbook has at least one recipe, usually several. The varieties are staggering to think about! Why so many? How should you pick one? Remember that meatballs were probably a way to use up leftovers, and then the mystery of all the different recipes clears up. The cook used the meat that was on hand, a filler that was available, and ingredients for the sauce based on not only regional or family preference, but what was handy. Some recipes call for half beef, half pork. Other recipes have half veal, half pork. Some have one-third each of pork, beef and veal. If you have dietary or political objections to any of the meats, substitute others. Once, as a way to include a vegetarian friend in a smörgåsbord I was serving, I made a recipe using only a vegetarian substitute for ground beef (and only vegetable oil, no dairy or meat products in the sauce). It wasn't great, but it wasn't bad, either. For flavoring, some recipes use nutmeg and dry mustard for flavoring, others use minced onions and allspice, others use thyme and marjoram. White pepper is a common ingredient. I once made them with only minced capers for flavoring, and loved it.
