This is a bouquet of the herbs Swedes use frequently in their cooking Bay, Cardamom, Cinnamon, Cloves, Dill, Mustard, Parsley and Pepper and which are essential in defining their cuisine. Smoked Baltic Herring, Gravlax , Fontina Cheese, Pancakes with Lingonberries, Glogg, Swedish Meatballs, Sima and Aquavit can be found on most Smorgasbords, and, if it's Thursday night, Split Pea Soup, the national dish. Traditional Swedish cooking cannnot be compared with the sophistication of, say, French or Italian cuisine. Swedish food is usually simple and satisfying, and nowadays also healthy. In the last few decades immigrants from all over the world have enriched our food culture with a host of exciting dishes. Foreign fast food, for example, has become an inseparable part of Swedish youth culture.

Special Dishes
If you want to try some typical Swedish fast-food, you can go to a hot-dog stand (korvkiosk). There you can choose between fried and boiled hot dogs, served with French fries or mashed potatoes together with mustard and/or ketchup (Senap eller ketchup? you will be asked). Lately, som new dishes have turned up in the stands, like baked potatoes.
If you want to taste some Swedish homely fare you can try pea soup with pork and pancakes for dessert. This dish is usally served on Thursdays and if you want to go the whole hog you should order some Swedish punch for the pancakes, a yellow and very sweet alcoholic beverage, usually served ice-cold.
Pytt i panna, a hash of fried diced meat with onions and potatoes is another specialty. It is served with fried eggs and slices of pickled red beets. You can also try

Swedish Christmas Cooking
Many people associate Christmas with Christmas trees, presents and lots of food. This is true also for Sweden. What few people are aware of are the traditions that has produced the standard christmas food menu. The Swedish Christmas table is, apart from the religious aspect of course, the oldest part of our traditional celebrations. The christmas food (and drink) has for a very long time been what has brought Swedes into the special Christmas mood. A typical Swedish Christmas table could include (among other dishes ): pickled herring (sw 'sill') in various spiceries, ham, porridge, meat balls, sausages and 'Jansons temptetion' (a anchovies and potatoes casserole). The dishes tend to be rather rich in fat. This probably depended on the imposed fast of the catholic church at this time of year. Traditional Christmas cooking has always been conservative. For example, in some places potatoes were forbidden at Christmas (potatoes became popular during the 18th century) and some bread should be made with corn flour which wasn't used at other times of the year. One of the reasons for this is the religious rules by the catholic church (Sweden was catholic country untill the early 16th century) for the Christmas fast. Another reason was the traditional slaughtering of a pig to be eating after the fast, while other dishes simply are old traditional country cooking. One also has to consider the primitive possibilies for preserving food and that bad kitchen hygien limited the menu to porridge and pickled herring. Further more, people usually tried to make the everyday bread and cakes look particularly appetising or tried to take extra care in the preparations for Christmas (examples are the special Lucia Saffron cakes, gingerbread pigs and spiced Christmas beer). Regional differences has been pronounced but today, with more people living in cities this is not so.
