This is an unusual addition to afternoon tea. Instead of bland cucumber and butter, you'll find rich, musky prosciutto and tangy honey mustard and cool asparagus. These sandwiches are a perfect foil to stronger, more full-bodied teas. convert Ingredients 54 medium asparagus spears 18 slices firm-textured bread 8 ounces whipped cream cheese, room temperature Freshly ground pepper 1/2 pound prosciutto di Parma, thinly sliced Honey mustard Method 1. Cut asparagus spears to fit bread slices. 2. In a large saucepan fitted with steamer insert, bring 1 inch of water to a boil and steam asparagus until just cooked, about 3 minutes. 3. Plunge asparagus into bowl of ice water. When chilled, remove and pat dry with paper towels. 4. Spread bread slices with thin layer of cream cheese, pepper generously and set aside.

Cut pork crosswise into thin slices. Slice them into strips 5x1/2 inches. Combine oil, mustard, lemon juice, garlic and oregano. Pour over pork slices, cover and refrigerate for 1 to 8 hours. Drain marinade from pork and roast slices in preheated 450 degree oven. Roast until crisp, about 10 minutes. Open each pita half to form a pocket. Divide pork among the four halves. Heat 2 tablespoons salad dressing in large skillet on medium heat. Add peppers, cook and stir 5 minutes or until tender-crisp. Remove from skillet, set aside. Add remaining salad dressing, Italian dressing and meat to skillet. Cook 5 minutes or until heated through. Fill rolls with mixture. Makes 6 sandwiches. You can also top finished sandwiches with Mozzarella or Provolone cheese.

With motor running, add the oil in a slow stream and blend until emulsified. Season to taste with salt and pepper and transfer to a bowl. Spread each slice of bread generously on one side with the mayonnaise. On half the slices, arrange an even layer of cucumber slices. Top with remaining bread slices. Cut each sandwich into quarters before serving. Makes 32 tea sandwiches.

Summer Tomato Sandwiches
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon lemon zest
  • 1/3 cup mayonnaise
  • 1/4 teaspoon each, salt and pepper
  • 1 (1lb) loaf French or sourdough bread
  • 3 large tomatoes, sliced thickly
In a small bowl, combine lemon peel and juice, mayonnaise, salt, and pepper. Stir well. Cut eight slices (about 1/2-inch thick) from center of bread loaf. Toast if desired. Spread mayonnaise mixture on each slice of bread. Arrange tomato slices on 4 bread slices; top with remaining bread slices, mayonnaise side down. Cut each in half to serve.
Serves 4.

STUFFED FINGER SANDWICHES

1 long thin loaf French bread (about 24x2x1 inches).
1/2 Cup plus 2 tablespoons nonfat cream cheese.
1/2 tsp dried Italian seasoning .
3/4 tsp crushed fresh garlic.
4oz thinly sliced cooked turkey breast.
8-10 fresh tender spinach leaves.
1/2 medium red bell pepper, cut in thin strips.
1/2Cup chopped frozen (thawed) artichoke hearts,
or 1/2 cup drained and chopped canned artichoke hearts.
Using a serrated knife, slice the French bread lengthwise,
cutting off the top third of the loaf.
Using your fingers, remove and discard enough of the soft inner
bread to leave only a 1/2 inch-thick shell.

Combine the cream cheese, Italian seasoning, and garlic in a small bowl, and stir to mix well, Spread half of this mixture evenly over the inside of the bottom shell.
Roll up the turkey slices, and arrange them in an even layer
over the cream cheese mixture.
Lay the spinach leaves over the turkey, and top with a layer of pepper strips.
Finish with a layer of artichokes.

Spread the remaining cream cheese mixture over the inside of the top shell. Place the top shell over the bottom shell to reform the loaf, and wrap the loaf tightly
