While I also add some of the tried and true items to my garden, the herbs I grow have a special place in my heart...and my kitchen! Fresh herbs are a welcome treat in my summer kitchen. Herb gardening is very simple and fulfilling. Caring for a small garden takes little time and the fresh herbs that find their way to your dinner table are sure to bring oohs and aahs from those seated around it! Before we get started, I'd like to extend my appreciation to the people at Olbrich Botanical Gardens in Madison, Wisconsin. All of the wonderful photographs presented in this article were taken there. Too bad they wouldn't let me take some samples home! Types of Herb Gardens One of the major advantages of an herb garden is its versatility. You can grow your own on a tiny patio or make it spread across a backyard. You will need to determine whether you want to plant your garden in a plot or in containers. Of course, you can always use a combination of both for a unique look.

Q : Where do I begin if I want to start growing an herb garden inside?
A : (Jesse Mack Burns, Ask DIY Gardening expert) A great place to start is in your cookbook! Leaf through it to check out recipes with herbs, and decide what you'd like to have available in your own kitchen. You might like chives, which have an onion flavor and are good in soups and omelets ( figure A , at left), or rosemary ( figure A , at right), which is great with chicken. Select a few of these to plant in a strawberry jar, ( figure B , at right), which has openings on the sides and at the top and is a good way to showcase an indoor herb garden. One good choice is sage ( figure C ), because it has fuzzy leaves and will cascade from the side holes. It also has a good flavor, particularly for stuffings and stews. Parsley ( figure D ) is also a good selection for an indoor container garden. It's delicious as a basic seasoning for potatoes, stews, breadings, sauces . . . and it's also a nice garnish.

    Conscious Choice, April 1999 My own herb garden has grown from my love of plants and because I have always liked the idea of an herb garden. From there grew a love of cooking with fresh herbs and an affinity for particular plants and recipes and, of course, experimenting with their healing properties. The idea of an herb garden holds a timeless appeal. To walk outside and snip lavender ( Lavandula officinalis syn. L. angustifolia ) to tuck in your child's pillowcase for sweet dreams; to pluck a sage leaf ( Salvia officinalis ) and rub it on an insect bite or sting for relief, to harvest comfrey leaves ( Symphytum officinale ) to make a compress for a bruise or sprain: all of these make a connection between your work, the earth's offerings, and your own personal needs. Growing herbs in your own backyard offers a simple, joyful way to integrate them into your life. Additionally, herbs grown locally adapt to the ecosystem in which you live and may provide unique benefits.
    Herbs do not necessarily require a bed of their own. They can be integrated into an existing vegetable garden (annual herbs) or perennial garden (either annual or perennial herbs).

For centuries, many cultures around the world have enjoyed and employed herbs as an integral part of daily living. Here are some herbs which have earned international appeal: FENNEL This perennial herb, belonging to the carrot and parsley families, was used in ancient times to cure jaundice, infant colic and hiccups. Today, fennel is used in Africa to aid digestion as it is thought to be an antispasmodic for the digestive tract. In Latin America, fennel is still used to increase milk production in nursing mothers and Jamaicans use it to treat colds. If you are planning your herb garden for next spring, fennel is easy to grow from seed when planted in rich, moist soil. Germination takes about 2 weeks and seeds are ready for harvesting in late summer when they begin to turn brown,. Dandelion Although it is most commonly thought of as a weed, this herb is rumored to be beneficial in aiding digestion, preventing cancer and helping treat premenstrual syndrome, obesity, high blood pressure, congestive heart failure and yeast infections. In ancient Europe, dandelion was used to treat jaundice and gallstones. Dandelion is believed to be a natural diuretic. Although slightly bitter, dandelion leaves may be added to salads or cooked as a vegetable with some garlic, oil and lemon. As most gardeners know, dandelions are easy to obtain as they will grow in almost any soil. Just be sure to harvest leaves while they are young and still developing; mature leaves have an extremely bitter taste.
