    THE NEWCOMERS Georgia’s Rich Culinary Tradition

    In the days of the former Soviet Union, Georgia was to Russia what Provence is to France. Georgia offered a cornucopia of dishes based on rich spices and bountiful fresh produce to Russia and later to its neighboring states in the former Union of Soviet Socialist Republics. Georgia's rich culinary heritage comes from centuries of foreign conquest. Bordered by Turkey and Azerbaijan, it repeatedly was besieged by Persians, Turks, Arabs and Mongols from the seventh to 19th centuries. These groups brought their food traditions with them into the region and adapted them to the bounty that came from the area's fertile soil. Finally, Georgia became a Russian protectorate in 1801 and ultimately part of the USSR when the Communist Revolution swept Tsarist Russia. In the two centuries since, Georgia has served up a rich feast that includes traditional favorites such as pickled vegetables, dried fruits, highly spiced stews, flat breads in the Middle Eastern style and prized wines like Kindzmarauli, a red wine alleged to have been Joseph Stalin's favorite. Although Georgia declared independence from the former USSR in 1991, markets and restaurants selling Georgian delicacies still are an incredibly prized part of Russian life.

    NoteGeorgia has been beset by ethnic and civil strife since independence. In late 1991, the country's first elected president, Zviad GAMSAKHURDIA was ousted in an armed coup. In October 1993, GAMSAKHURDIA, and his supporters sponsored a failed attempt to retake power from the current government led by former Soviet Foreign Minister Eduard SHEVARDNADZE. The Georgian government has also faced armed separatist conflicts in the Abkhazia and South Ossetia regions. A cease-fire went into effect in South Ossetia in June 1992 and a joint Georgian-Ossetian-Russian peacekeeping force has been in place since that time. Georgian forces were driven out of the Abkhaz region in September 1993 after a yearlong war with Abkhaz separatists. Nearly 200,000 Georgian refugees have since fled Abkhazia, adding substantially to the estimated 100,000 internally displaced persons already in Georgia. Russian peacekeepers are deployed along the border of Abkhazia and the rest of Georgia.

One of them, the U.S.A., remains the world’s “superpower” and is rather familiar to us yet the other, Russia, that recently created state that was once a “superpower”, remains as enigmatic as it was during the Cold War. Russia, since 1990, has been rocked by social, economic and political change and therefore by a multitude of centripedal forces.
    This course, through an examination of the physical, historical, economic, political and regional geographies of the country will illuminate many aspects of the divisive forces currently at play in Russia.     INTRODUCTION
    Background: Turkey was created in 1923 from the Turkish remnants of the Ottoman Empire. Soon thereafter the country instituted secular laws to replace traditional religious fiats. In 1945 Turkey joined the UN and in 1952 it became a member of NATO. Turkey occupied the northern portion of Cyprus in 1974 to prevent a Greek takeover of the island; relations between the two countries remain strained. Periodic military offensives against Kurdish separatists have dislocated part of the population in southeast Turkey and have drawn international condemnation.

It is a mountainous country, with the northern boundary running along the Great Caucasian Range and the southern boundary hitting the mountains of the Minor Caucasus. Between these two ranges, plains extend west to the 330km (205mi) coastline of the Black Sea. LANDSCAPE: The surface of Georgia ranges in altitude from meters on the Black Sea level up to 5.184 metres. The northern, central and southern parts are dominated by mountains (with Caucasus mountains in the north, Likhi range in the central part and lesser Caucasus mountains in the south). Kolkhida Lowland opens to the Black Sea in the west, while in eastern Georgia all rivers join the Mtkvari (Kura) river, forming the Caspian basin. 2/3 of the territory is mountainous, the average height being 1200 meters. The main peaks are : Shkhara (5184), Kazbegi (5033), Rustaveli (4960), Tetnuldi (4852), Ushba (4710), and Shkhelda (4322). The main rivers are: Mtkvari (384 km), Alazani (390 km), Iori (375 km), Rioni (327 km), Enguri (221 km), and Khrami (220 km).
