You don't have to be a waiter to get tips in a restaurant. We got a few pointers in healthy eating, from two of the world's finest French chefs and we're about to pass them on to you.
Our teachers were both members of the upscale Relais and Chateaux hotel group, Daniel Boulud, who runs Daniel restaurant in New York, and his buddy Raymond Blanc, owner of the equally posh Le Manoir aux Quat' Saisons in England.
Now if you think French food adds up to fat, as Daniel put it, "You have the wrong impression of French cooking."
While more than 30 percent of Americans are obese, only eight percent of French people are. And their rate of heart disease is one-third what it is in America.
That's why our sample meal was tuna tartar with caviar, mullet with sun-dried tomatoes, and Raymond's trademark cafe creme.

This six-day program is led by chef-instructor Daniel Bonnot. Daniel has cooked in some of the world’s most famous kitchens, including the Savoy Hotel in London, several top restaurants in Paris and, currently, Bizou in New Orleans. He has received numerous awards and accolades for his culinary mastery. The program takes place in our beautifully restored 18th century stone Provencal farmouse. With each session limited to ten participants, you will receive plenty of individual attention during the three to five hours of cooking instruction per day. The program also provides numerous organized excursions to local points of interest, including a lavender distillery, an olive oil mill, the famous Nyons open-air market, a goat cheese farm and a wine cooperative, as well as some historical sites.

Popular author Lucian Truscott and his wife, Carolyn, spent a month in France cooking and entertaining. Even though Truscott is a best-selling author, his books have nothing to do with entertaining or cooking: he and his wife entertain as a hobby. Here, they prepare for their French-themed dinner party, in which they use chicken as their main dish. Carolyn writes out menu cards for all her dinner parties, as well as place cards for each guest.
