There are ways to ensure that the food you prepare will be safe as well as delicious. However, keep in mind that cases of foodborne illness normally rise during the summer. Second, there are the "people" causes for the upswing in summertime foodborne illnesses. More people are cooking outside at picnics, barbecues, and on camping trips. The safety controls that a kitchen provides thermostat-controlled cooking, refrigeration, and washing facilities are often not available. Additionally, food at picnics and other outdoor gatherings may be prepared by well-intentioned volunteer cooks who don’t necessarily know how to safely prepare, store, and serve large quantities of food. Summertime Cooking: Fourth of July Ribs From Jeanne's Kitchen Fourth of July Ribs Ingredients: 2 1/2 tsp salt 3 ounces + 1 1/2 TBSP honey 5/8 tsp ginger 2 1/2 tsp pepper 3 3/4 lbs spareribs 5 ounces soy sauce 5 ounces apricot jam 1 1/2 each bay leaves 1 1/4 tspdry mustard 7 ounces + 1 tbsp lemon juice 1 1/4 each onion 2 ounces = 1 tbsp vinegar 1 1/4 tsp chili powder 2 1/2 each jalapeno 1 1/4 package aluminum foil 2 1/2 each garlic cloves 1 1/4 green onions 1 1/4 cup Russian salad dressing 1 1/4 tbsp liquid hot pepper sauce 1 1/4 cup prepared barbecue sauce Instructions: In a blender, puree 3/4 CUP lemon juice, 1 CUP chopped green onions, 2 garlic cloves, 2 TSP salt, 1 TSP dry mustard, 1/2 CUP soy sauce, 6 TBL honey, 1 chopped onion, 2 bay leaves, 2 TSP pepper, 1/2 TSP ginger, and 2 jalape±os. Add 2/3 CUP prepared barbecue sauce and process until well blended. Pour over 3 LBS spareribs, cover, and marinate overnight in the refrigerator, turning occasionally. Remove from the marinade and wrap each rib in aluminum foil. Arrange on baking pans and cook at 350 degrees for 1 hour and 30 minutes. Remove from the foil and grill over hot coals. Meanwhile, boil the marinade until thick. Stir in 1 CUP prepared barbecue sauce, 1/2 CUP honey, 3/4 CUP brown sugar, 1/2 CUP apricot jam, 1/4 CUP vinegar, 1/2 CUP soy sauce, 1 TBLliquid hot pepper sauce, 1 TSP chili powder, and 8 OZS Russian salad dressing. Baste the ribs with the sauce and grill for 30 minutes.
