about
the School of Nutrition and Food Science
Programs and Facilities
at Acadia University
The School of Nutrition and Food Science brings together one of Acadia's oldest programs and one of its newest. The first nutrition degree was granted in 1928, whereas Food science came to Acadia in 1987. Its goal is to provide graduates for employment in the food industry and to carry out applied research. In 1992, the two units were joined to form a new school, unique in the Maritimes, which offers two separate degree programs, the Bachelor of Science in Nutrition and the Bachelor of Science in Food Science. Nutrition students learn about the science of foods; eating lifestyles; the psychology of why we eat certain foods; biology; and chemistry. Because many nutritionists find employment as nutrition educators part of the program at Acadia also involves exposure to some social science courses, each as communication, psychology, and sociology. With these courses students learn how to work with other people effectively, and how to plan, develop, and manage nutrition programs. The food science program at Acadia is the only such bachelor degree offered in the Maritimes and is designed to provide the broad scientific background that is required in the food industry. In their first year, students take introductory food science, chemistry, biology, english and calculus. Later years see the food science students taking such courses as microbiology, food engineering, and biochemistry.
