CAIROIn light of the experiences of some of my esteemed colleagues in this glorious city I now call home, I thought it time to come to her defence.
Or at least offer some tips on dodging the worst of the touts and other rat-like creatures.
Despite the fact that in Middle Eastern dance terms it is apparently not what it once was, Cairo remains a popular destination. As it should. It's still Cairo after all-the pyramids, more than a thousand years of Islamic culture, including some fine architecture, centuries-old souqs, and, of course, the food.
Yes, when you've been out sightseeing all day, when you think you'll scream at the sight of another Volkswagon-sized block of yellow stone, when the next person to offer to show you their brother's shop had better hope he has a brother to carry on the family name, when you're in need of refreshments, a chair, and perhaps even a flush toilet…the last thing you want is to have a couple of open soft drinks that you don't want plunked down in front of you by a grinning waiter who proclaims, "Welcome in Egypt!" as he proceeds to give you mediocre food at inflated prices and then explains to you why you should be happy to pay so much for this "real Egyptian experience".
Cairo is filled with wonderful places to eat where you won't be given mediocre food at inflated prices. However, most of them are not in the ever-popular Khan al-Khalili area, where bus loads of tourists are released by their guides for their daily dose of exotica. Step off that bus and you can tell that every waiter in sight sees you as a fatted sheep waiting to be fleeced.

Welcome all Newcomers!
Oh, we had a fun and happy Easter! The Easter bunny went all out, as usual. What a guy! How did all of you fare? Any memorable moments to share with the rest of our readers? We had the pleasure of my cousin and his wife visiting from Italy with their two children who happen to be the same age as mine. They had a blast together. I love family gatherings, especially ones that involve kids. There's always laughter and kids really know how to have a good time, ya know? No work woes, no pressure ... just heathanistic good times! LOL! Parents, April 27th is "Bring Your Daughters to Work" day! The one day of the year you can get away with it and spend some serious quality time with your daughters. Seeing you at work, realizing exactly what you do every day when you're not playing Mom, is a great experience for our daughters. If your boss objects, he/she is a creep! Either live with it or move on ... ;-) I think we should have a day to bring our sons to work, too. I really do love hearing from you and would especially like to receive feedback about this newsletter. Any comments, suggestions or links to share with fellow readers are always welcome so feel free to drop me an email once in a while! :-)

    Food and Drink FOOD AND DRINK In Egypt, dining out can range from stand-up sandwich bars to luxurious five-course meals. You can find small, inexpensive establishments that serve good Egyptian food for only a few pounds. If you're in a hurry, try the local snack bars. While the cubbyholes off the street (which probably have running water) are generally safe. The larger cities even have Western-style fast-food chains like McDonald's and Kentucky Fried Chicken, but they're relatively expensive. In cities both food and water are safe although the change in your diet may produce short-term gastrointestinal upsets. EGYPTIAN MEALS Although Egyptian eating habits may seem erratic, most natives begin the day with a light breakfast of beans (or bean cakes), eggs, and/or pickles, cheeses, and jams. Most families eat their large, starchy lunch around 1400-1700 and follow it with a siesta. They may take a British-style tea at 1700 or 1800 and eat a light supper (often leftovers from lunch) late in the evening. Dinner parties, however, are scheduled late, often no earlier than 2100, with the meal served an hour or two later. In restaurants lunch is normally 1300-1600, dinner 2000-2400. Restaurants In Egypt, as in the rest of the world, restaurants are only as good as the cooks they employ, and cooks seem to be continually changing. For current information on the best restaurants, the expatriate community is unbeatable, and the magazine Cairo Today includes monthly tips listing places to try, and publishes an annual dining guide. Most establishments use native ingredients and will offer fruits and vegetables in season. Menus are in both Arabic and English except in Alexandria, where they are in Arabic and French. In large restaurants, the maitre d'hotel will speak English, French, and possible German, Italian, or Greek. These establishments serve a mixture of international cuisine but often include Egyptian or Middle Eastern fare as well. Most hotels also maintain 24-hour coffee shops.

    The variety of Egyptian recipes is endless. They go back a very long way. As a result of subsequent colonization, foreign influence is somewhat present, specially from the Turkish cuisine (it is understandable after more than 300 years of Turkish presence in Egypt). The "Pashas" living in Cairo mainly employed the natives as help and cooks. Their kitchen doors opened to us with their culinary secrets and, hence, Turkish food became part of ours. Recipes gathered here are those known to the common Egyptian ,irrelevant of their origin. Their names in Arabic are the ones we all know and use. Ingredients used are very easily found in Middle East/Oriental specialty stores. Ancient Egyptian Food and Drink The Egyptians were very secure in that the Nile valley always yielded enough to feed the country, even when famine was present in other nearby parts of the world. The Egyptian's basic food and drink, bread and beer, were made from the main crops they grew, wheat and barely. There were many types of bread ,including pastries and cakes. Since there was no sugar, honey was used as a sweetener by the rich, and poor people used dates and fruit juices. Egyptians liked strong-tasting vegetables such as garlic and onions. They thought these were good for the health. They also ate peas and beans ,lettuce, cucumbers, and leeks. Vegetables were often served with an oil and vinegar dressing. Figs, dates, pomegranates and grapes were the only fruits that could be grown in the hot climate. The rich could afford to make wine from their grapes.
