Bare Hand Contact vs. Gloves While there are many differing opinions on how to address food safety and the risks of bare-hand contact, the National Restaurant Association has always promoted a balanced approach to this issue. Simple, “silver bullet” remedies such as mandatory glove use or the banning of bare-hand contact altogether may seem attractive to some, but they generally prove to be ineffective and impractical in day-to-day applications.
In the real world, improved hand washing compliance, restriction of ill employees and effective hand-washing management are the only solutions that can be realistically expected to address bare-hand contact issues and meet the industry’s needs.
The importance of effective education and training programs highlighting hand washing, the restriction of ill employees and clean-hand management cannot be overstated. Many educational materials already exist in programs such as the National Restaurant Association Educational Foundation ServSafe® food safety education program.
The absolute prohibition of bare-hand contact and mandatory glove rule first surfaced in the 1993 FDA Food Code. The issue has been addressed in numerous regulatory meetings and state and local government hearings since that time. As a result of the increased attention, many in the restaurant industry, as well as state and local regulatory officials, have implemented effective hand-washing interventions and regulatory strategies.

Dairy Foods Complex By John A. Partridge , Associate Professor and Dairy Foods Complex Facility Coordinator. The Mission Instruction The undergraduate and graduate programs of Food Science and Human Nutrition in the College of Agriculture and Natural Resources serve those students wishing to pursue careers in the dairy/food processing industries. To adequately prepare students for their careers, access to the latest technology and equipment, appropriate to the dairy/food industry, is essential. Res earch: New technologies of processing along the issues of food safety and diet/health present a formidable challenge to strengthening the research program in dairy processing. The presence of a facility housing modern analytical and pilot laboratories enhances the ability of the scientists at MSU to address these important issues.

FACILITIES AND CAPABILITIES Revitalization of the MSU Dairy Food Complex The Dairy Food Complex has been fully renovated through special support by the State of Michigan. The Animal Agriculture Initiative (AAI) revitalization project includes modernization of all mechanical, electrical, lighting, and communications systems within-the building; window and exterior door replacement, life safety modifications; building changes to create handicapper accommodations; and modernization of all research and teaching space. The newly renovated Dairy Food Complex (South Anthony Hall) houses the Dairy Chemistry, Dairy Microbiology, and Dairy/Food Rheology, research laboratories as well as the new Food Chemistry teaching laboratory The total AAI investment in equipment and renovation of approximately 14,000 square feet of assignable space was approximately $5 million. Dairy Processing Plant The Dairy Plant is equipped to process a variety of natural cheeses, cultured dairy products, and ice cream in a state-of-the-art processing system.
