B ack in May of 1989, after Tom Valentine first moved to St Paul, Minnesota, he heard on the car radio a short announcement that bolted him upright in the driver's seat. The announcement was sponsored by Young Families, the Minnesota Extension Service of the University of Minnesota:
"Although microwaves heat food quickly, they are not recommended for heating a baby's bottle," the announcement said. The bottle may seem cool to the touch, but the liquid inside may become extremely hot and could burn the baby's mouth and throat. Also, the buildup of steam in a closed container such as a baby's bottle could cause it to explode. "Heating the bottle in a microwave can cause slight changes in the milk. In infant formulas, there may be a loss of some vitamins. In expressed breast milk, some protective properties may be destroyed." The report went on. "Warming a bottle by holding it under tap water or by setting it in a bowl of warm water, then testing it on your wrist before feeding, may take a few minutes longer, but it is much safer."

Cooking With Peanuts! Microwave
Peanut Brittle
If you have a microwave and you'd like to whip up some peanut brittle in a hurry, this recipe will let you do it in a little less than 10 minutes (plus cooling time, of course). Ingredients:
  • 1.5 cups of raw, shelled Virginia peanuts (leave the skins on)
  • 1 cup of granulated sugar
  • 1/2 cup light corn syrup
  • 1 teaspoon of butter
  • 1 teaspoon of vanilla
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt
Method:
  • Mix the peanuts, sugar, corn syrup and salt together in a microwave-safe casserole dish until well mixed
  • Cook in a microwave on high for 4 minutes; open and stir the mix well; then cook on high for another 4 minutes
  • Open, stir in the butter and vanilla, then microwave on high for a further 2 minutes
  • Finally, remove from the microwave, open the dish, add the baking soda and stir quickly until the mix is light and foamy
  • Immediately pour the mixture onto a lightly-greased baking sheet, spreading it out thinly.

Declare independence from heat
By ANN STEINER and CICI WILLIAMSON COLD salad can be hot stuff for the Fourth of July. Instead of making that same old potato salad, turn the heat up and cool down. Microwave The Aztecs and other tropical-zone Indians had the right idea: Use chili peppers in the food. The capsaicin in peppers causes the body to perspire in an effort to cool itself. Spicy foods are "in," and it's easy to turn up the heat in potato salad using pepper sauce and chili powder. Keep your kitchen cool by microwaving the potatoes. Cut the potatoes into chunks with or without peeling them, and put them into a microwavable bowl. Very little liquid is required for microwaving, saving vitamins that are tossed out with the water when potatoes are boiled. Stir once during microwaving to even the cooking. Then drain any liquid remaining and make the salad. For a fun variation, try sweet potatoes, golden potatoes or purple potatoes. But don't forget to add the hot stuff to be a cool character. Summer Potato Salad 2cups green beans, cut into 2-inch pieces (about 6 ounces)

Microwave: Olympic recipes
Spicy Asian Beef and Grapes 2 tablespoons each: reduced-sodium soy sauce and dry white wine 1 clove garlic, minced 1 teaspoon sesame oil 12 ounces beef flank steak 1 tablespoon cornstarch 1 cup seedless grapes, halved 1 green onion, thinly sliced 2 cups finely shredded cabbage 1 teaspoon sesame seeds, toasted Combine soy sauce, wine, garlic, sesame oil and pepper flakes in small bowl; mix well. Slice steak across the grain into thin strips and add to mixture in bowl; stir to coat all pieces. Cover and marinate 20 minutes. Place marinated beef in a 2-quart casserole; stir in cornstarch. Add onion and cover with wax paper. Stirring midway through cooking, microwave on high 4 minutes. Add grapes, bell pepper and green onion; re-cover. Microwave on high 2 to 3 minutes. Line bottom of serving platter with cabbage; top with hot beef mixture. Sprinkle with sesame seeds. Makes 4 servings, each: 196 calories, 16 grams protein, 9 grams fat (39% of total calories), 12 grams carbohydrates, 2 grams dietary fiber, 35 milligrams cholesterol, 343 milligrams sodium. Italian Fillet of Sole 1 pound thin sole or other whitefish fillets 1/8 teaspoon cayenne pepper, or to taste

Cooking Safely in the Microwave Oven
Microwave ovens can play an important role at mealtime, but special care must be taken when cooking or reheating meat, poultry, fish, and eggs to make sure they are prepared safely. Microwave ovens can cook unevenly and leave "cold spots," where harmful bacteria can survive. For this reason, it is important to use the following safe microwaving tips to prevent foodborne illness.
Microwave Oven Cooking
  • Arrange food items evenly in a covered dish and add some liquid if needed. Cover the dish with a lid or plastic wrap; loosen or vent the lid or wrap to let steam escape. The moist heat that is created will help destroy harmful bacteria and ensure uniform cooking. Cooking bags also provide safe, even cooking. Do not cook large cuts of meat on high power (100%). Large cuts of meat should be cooked on medium power (50%) for longer periods. This allows heat to reach the center without overcooking outer areas. Stir or rotate food midway through the microwaving time to eliminate cold spots where harmful bacteria can survive, and for more even cooking.

What is microwave energy?
When a stone is thrown into a quiet pond, waves are formed which radiate outward from the point at which the stone broke the water's surface. There are other kinds of waves which we cannot see, but know they exist because we observe their effect. They are known collectively under the term Radiation These waves also radiate outward from the center like the waves on the surface of the pond. They travel, however, at the speed of light, 186,282 miles per second, and carry small bundles of energy called photons which vibrate at various frequencies. There are two basic kinds of radiation:
IONIZING
NON-IONIZING
X-rays radio waves gamma rays microwaves cosmic rays infra-red waves ultra-violet rays light waves Radiant waves are characterized by their wavelength and their frequency of vibration (number of complete cycles per second).

The Microwave Oven
Unlike most cooking appl.iances in which the food to be cooked is overwhelmed with heat, a microwave oven operates essentially at room temperature. In fact, if anything, the food heats the oven. The purpose of this section is to describe this microwave heating and cooking device. This is best acomplished by reference to the illustration following.
The view shows the basic parts of the oven:
the cavity (1)
the door(2)
the magnetron (3)
the waveguide(4)
the mode stirrer (5)
the power supply (6)
the power cord(7) The main function of the power supply is to convert low voltage line power to the high voltages required by the microwave energy generator, the magnetron . When the magnetron is energized it generates high frequency energy which then passes down the waveguide to the cavity. The mode stirrer as it turns interrupts the energy as it enters the cavity and causes it to be distributed more uniformly about the cavity before it is absorbed by the food load. Without the mode stirrer, standing waves would occur in the cavity and there would be regions which could best be described as hot spots and color spots. The food load is shown in the top figure, positioned off the floor of the oven for a reason. This position permits some of the energy to be reflected from the oven floor into the food from below. If this were not done the bottom of the food would lag behind in cooking giving uneven doness.

Microwave cooking is one of the most important causes of ill health . It is certainly one of the most ignored. There was a lawsuit in 1991 in Oklahoma. A woman named Norma Levitt had hip surgery, but was killed by a simple blood transfusion when a nurse "warmed the blood for the transfusion in a microwave oven!" Logic suggests that if heating is all there is to microwave cooking, then it doesn't matter how something is heated. Blood for transfusions is routinely warmed, but not in microwave ovens. Does it not therefore follow that microwaving cooking does something quite different? A little evidence of the harm caused by microwaving cooking was given by the University of Minnesota in a radio announcement:
    "Microwaves ... are not recommended for heating a baby's bottle.
