Do you long for a wonderful meal at the end of a hard day of paddling, or do you just want to open a packet, add water and eat to refuel your body? For those of you interested in the fine art of camp cooking, several books have been published over the years:
  • Kayak Cookery by Linda Daniel
  • Wilderness Cuisine by Carole Latimer
  • Supermarket Backpacker - Harriett Barker (an oldie)
Here are a few basic meal ideas:
  • Breakfasts - bagels or english muffins with peanut butter and jam, instant oatmeal, cream of wheat or rice, cheese quasidillas, cereal or granola with milk, fruit leathers, scrambled eggs, couscous or rice cakes.
  • Lunches - stopping for lunch is not always feasible or opening the hatches and digging out stoves and pots takes too much time, so most folks rarely cook lunch. Rely on bagels, trail mix, apples and oranges, pita bread, cheese, gorp, dried fruit, nuts, beef jerkey, canned oysters, clams,sardines or tuna salad on crackers, beef stick (summer sausage/dry salami),granola bars and hard candies. If you want to take a break, especially on a cold day, get out your gear and put on a pot of soup to warm you up.
  • Suppers - here's where you can be a minimalist and open a can of soup or show your friends your gourmet talents. If you lack ambition or it's cold/rainy/buggy/etc., bring ready to eat one-pot meals like beef stew, soup or chili in a can. Also, packaged rice or noodle dishes such as red beans are handy and usually good tasting. If space and time are limited, use the freeze dried meals that you just add water to. I always carry one of these for emergencies. On the gourmet side, the possibilities are endless - bring a frozen, one pot meal for the first night, use fresh vegetables during the first week, dehydrate entire one-pot dishes at home or dehydrate parts of the meal and assemble dinner at camp.

There are no established campsites in the Denali backcountry; therefore, campsite selection is very important. Plan to spend 30 minutes surveying for the best place to establish your camp. The following guidelines will assist you in this process:
  • Your tent must be at least 0.5 miles away from the park road and not visible from it.
  • Camp on durable surfaces such as gravel river bars; avoid damaging fragile tundra.
  • In pristine areas like Denali, avoid camping where others have camped.
  • Do not move rocks or plants; leave the area as you found it so that future hikers do not see signs of your use.
Cooking
Fires are not permitted in the Denali Wilderness. Fuel for portable camp stoves is available for purchase at the park mercantile, located in the immediate vicinity of the VAC. When cooking, remain alert for bears; be ready to pack up and move quickly. Drinking Water
Giardia and Cryptosporidium are protozoa found in unfiltered water and present serious health risks. Take one of the following precautions before drinking water from a natural source:
  • Boil for 1 minute.

Precautions to be taken when handling gas.
Gas in a canister is stored as a liquid, so it is important to keep the cylinders upright at all times, especially when being transported. The valves should also be protected from damage whilst in transit. When setting up a kitchen area, place the gas bottles outside so that if there is any leakage it will dissipate rather than build up in the tent. Use plenty of hose from the regulator to the appliance so that any bends are smooth. When renewing hose give it a little extra length to allow for cutting the ends of if they split, but not too much that will tangle. Use jubilee clips to tighten the hose at each end. Tight is enough, too tight will crack the hose. If the hose is tight going on a drop of washing up liquid will help ease it on. I have a plastic utility box that contains spare regulators, hose clips and a screwdriver. I assemble and dismantle all hose and regulators for every journey. This prevents the regulators from being damaged in transit, and also ensures that every connection is inspected before use (you may like to ask your QM to show you this). Check for leakage by placing a drop of washing up liquid on every connection. It will bubble if there is a leak, and if this is the case it should be removed from service immediately and suitable repairs or replacements effected. Remember
