Superb!
I lucked upon this cookbook and was pleasantly surprised to find so many recipes that sounded really interesting. I have a picky husband who swore he wouldn't eat tofu - wrong.....I systematically worked my way through the recipes and all of them were a success. I feel really good about feeding my family such healthy food. Previously, I hadn't focused on incorporating so many colorful ingredients into our diet. This book would be a great purchase for a single person, a couple, or a family.

Fantastic southwestern health food.
I have been searching for quite some time for a southwestern-style cookbook that is health-conscious...unfortunately, most Mexican food and Southwestern food is not healthy by nature.This cookbook gives me thebest of both worlds.

Additionally, I agree with the other review on theresearch information at the beginning of the book...wonderful.I've neverseen such an abundance of information packed into about 40 pages ofhelpful-hints.

Great Cookbook for health-conscious non-vegetarians
I found _The Healthy Table_ completely by accident ... I wish I had found it earlier.Cookbooks seem to be divided into two camps:super healthy, super crunchy vegetarian cookbooks (with mostly inedible dishes), or superrich, super fat, decidedly insalubrious gourmet or ten-minute dinnercookbooks. This cookbook combines the best of both, leaving out the worst-- the recipes are easy and satisfying, but also very healthy.

Mainly,I was impressed with the amount of medical and dietary research that laybehind the recipes:_The Healthy Table_ most definitely is NOT"Grandma's favorite recipes for people who don't expect to live beyond45 anyways."Nor is it a mass-produced hospital cookbook, written ina laboratory.The author brings her personal touch to the work:facedwith the task of cooking for a family afflicted with abnormally highcholesterol, she spent years researching diets and health, in order to cookfood that would be both satisfying and healthy for her kids. (She comesacross as the sort of person I'd like to meet for coffee some day).Herheartfelt dedication shows, and her work has paid off.

After a monthof using it, I can safely say it's one of the best all-purpose cookbooks Ihave on my shelf.It's helped me to eliminate the garbage from my diet,without resorting to subsistence on nuts and berries in the forest.Ihighly recommend it.
