We've had this vegetarian cookbook for almost 30 years. It was written in the days when "health food cookbook" meant "something really weird like carrot loaf and brewer's yeast," and I don't mean that in a good way. The Odiyan Country Cookbook, first published in the days when the Moosewood Cookbook was revolutionary, reflected a true warm hippieness and Indian/Asian influences. I've always appreciated it.

While we experimented with lots of the recipes in this 200-page cookbook, we reach for it primarily for a few favorite recipes. As it turns out, they're mostly the things we make when money is tight, because so many of these earthy recipes also have the virtue of being astonishingly cheap. For example, assuming you've a well stocked spice cabinet (you'll have to buy fenugreek, for all of a 1/4 tsp),lime-tomato dal and rice makes two meals for two people and MIGHT cost five bucks. (Lentils, an apple, 3 tomatoes, 3 limes -- and we often have at least some of those in the house.) Plus it's ready in about 45 minutes, and it reheats beautifully.

There's also a one-dish bulgar pilaf with currants and spinach we rely on -- and a really wonderful spinach lasagne in cream sauce and ricotta (add some sauteed carrots and zucchini to one of the layers).

As our finances got better (whew!) we turned to this cookbook less often, but we really shouldn't wait until months when money is tight. I still do love that lime-tomato dahl, in a comfy-tummy satisfying way, and it's a perfect protein. While some of the recipes show the cookbook's old-time veggie origins (such as making soymilk from scratch, or a tahini-fruit pudding), my longtime favorites have kept the book firmly on the shelf. The recipes in this book are wonderful, memorable, truly inspired. And easy! Alas, like many vegetarian cookbooks, its modest presentation and limited distribution causes it to be hard-to-find. It's a "word ofmouth" book, pun intended. I learned of it from the best day-to-dayhome cook I know. I wish I could remember to use it more often, becauseevery dish is a delight. I usually make 1 soup recipe each week. I have several soup recipe books, but this is the one I use exclusively. I have enjoyed every soup recipe so far. It is also nice to know that the meals are healthy. I highly recommend this book.

I haven't yet made anything from the book, but as an experienced cook myself, I can read a recipe and know pretty much whether I will like it or not.I might make a mistake once in a while, but it's very unlikely that anyone who calls themself "a skilled and experienced" cook would choose as many as six recipes and not be able to tell they would be "vile" once made.I'm all for honest reviewing, and if you don't like a book, so be it, but this review was unnecessarily harsh and, in my judgment, probably the act of someone who has very little nice to say about anyone or anything.
Once I try some of the recipes, I'll try to report back on them.For now, I've just read through them, and there's hardly one that doesn't sound interesting to me.On that basis alone, I feel justified on giving the book 5 stars, since I can't say that about most non-dessert cookbooks!

Sorry to disagree with the other reviewers, but this is the worst cookbook I have ever bought.I am a skilled and experienced vegetarian cook, and recipes in this book are perversely, malignantly vile.There will always be recipes we don't like in any cookbook, but I tried half a dozen soups in this book and they were just wretched.After the last one I just threw the book in the recycling bin.Back to Moosewood!

For me, the one thing that matters about a cookbook is: is it *inspired* or not? The ones that are not may have one to a few usable recipes, almost by accident, but the majority are either based on stale ideas, or they are too heavy, due to their use of meat, fat, sugar, or other such ingredients.

This book far surpassed my expectations. The recipes are original, hearty, satisfying - and low-fat. One of these soups with some bread and cheese makes for a simple and delicious weekday meal.

Most of the soups we've tried from this book have come out very well. We got off to a good start with Garlicky Cream of Celery Soup (p. 39). Examples of other successes: Cream of White Vegetables (p. 15; this worked fine with Chinese white radish/daikon; turnip is unavailable in Taiwan) - very smooth, soothing and flavorful; Gingered Pumpkin-Apple Soup (p. 25) - I'm not sure I'll put the apple in next time, but we all enjoyed the complex flavors of this one; Cream of Broccoli Soup with Whole Wheat Pasta (p. 96) also wasn't bad, even with plain macaroni shells. The Moroccan-Style Vegetable Stew (p. 26), with pumpkin, chickpeas and couscous, was very unusual and quite tasty. I was less impressed with the Tomato-Rice Soup with Snow Peas (p. 93) - this ended up something like Campbell's tomato rice, but then but I did make some substitutions, like white rice for brown. And I probably should have let the Curried Cauliflower-Cheese Soup (p. 84) thicken more before serving. You can skip the Sauerkraut Soup (p. 36) - this was edible, but didn't much appeal to any of us; too heavy on the sweet and sour, and not very satisfying. Still, I'm very gung ho about continuing to try out the other recipes. Well over half the recipes look doable to me in our environment, and that's a remarkably high ratio. I have found no other soup cookbook that can compare with this one. The recipes that work - and that has been most of them so far - are excellent, and just our style.

The book not only gives individual recipes but in fact teaches a *method* for making good vegetarian soups, i.e. pureeing cooked vegetables for a thick and hearty but not too rich base. Organizing the recipes by the seasons makes it easier to find a soup suited to the weather.

P. 27 has a recipe for 'Squash and Corn Chower', but that's the only typo I've spotted. The pencil drawings and quotes are quite charming. I haven't yet tried the bread and other 'accompaniments' recipes in the back, but they look intriguing.

In short: if you like soup but not meat, and are looking for ideas for simple but very good meals on the light side, this book is an outstanding choice. ... Read more

My wife and I have tried only five recipes from this cookbook so far (we are slowly making our way through it), and all have been great. Very simple to prepare, very flavorful, and mostly healthy. I would definitely recommend this to any beginner cook, and there are some great ideas for those of us who have been cooking a lot longer. Also, I am a big fan of any cookbook with pictures to prep your palate.

Although it says easy recipes on the cover, most of these recipes have uncommon ingredients which means hunting down the ingredients at the market.The pictures are beautiful almost like art work which makes you very hungry.

After reading the positive reviews for this book I decided to give this book a try. I'm newly vegetarian and the only veg. cookbook on my shelf was an old moosewood cookbook which just wasn't cutting it for me any more.
I've had really great results with Donna Hay (another Aussie chef, not vegetarian) any recipe I've made turn out fantastic! Easy recipes, beautiful photos and truly delicious. I absolutely love her books, highly recommended.

This book unfortunately has been nothing but disappointing and bland. The photos are pretty and enticing, the recipes are easy to follow but each dish I've made comes out bland. The best thing about these dishes is that it gives boyfriend and I the challenge to dissect the boring flavors and come up what we could add to make this food really pop. Oh, and another thing, there are several recipes which suffer even more by using canned ingredients. The book is called "Market Vegetarian" shouldn't we be using fresh produce?
It's given me a few okay ideas but pretty much I'm ready to toss this one in the trash.

This is a wonderful book. I purchased it as I have a vegetarian daughter who has lots of food allergies. Recipes are simple to follow and everything I have cooked has been delicious. I own many vegetarian books but like this the best. The sweet potato , coconut soup with Thai pesto is outstanding !

I'll admit that I originally only ordered this book because someone on Amazon was selling a used one for a few cents. Even with shipping, based upon the reviews, that makes it hard to pass up. Still, if it's not a great cookbook I always have no problem in saying so in my reviews, regardless of price...it needs to be "crave-worthy" for a five star review.

We've been grilling a crazy amount lately. 2 weekends ago it was 6am and I was on the deck, in the rain, with a deck light on in the dark, in the cold, grilling something to take to work for lunch. THAT kind of crazy grilling mode. And I have several vegetarian grill books so I am still picky.

This impressed me...and continues to do so. In fact, I've been reaching for it lately non-stop for new ideas. In fact, it's one of those that would make true carnivores not notice anything amiss.

The book is extensive and thick and is divided into the following sections:
Grilling Basics
Simply Vegetables
Appetizers and Soups from the grill
Great Grilled Salads
Sensational Sandwiches and Burgers
Wrapped and Stuffed
Fired-Up Flatbreads and Pizzas
Flame-Kissed Pasta
Kabobs, Couscous, and other compelling combinations
Grilled Fruit and Desserts
Marinades, Glazes, Pestos and Dipping Sauces

First, for the veggie burger section alone it's worth it. I personally would rather eat a bun with just cheese and condiments than a veggie burger. Not so for these recipes. Here's a few examples of some recipes I like:

Portobello Mushroom and Goat cheese sandwiches (tip: replace the tomatoes with salsa)
Mushroom Steak Sandwiches with Blue Cheese Dressing

I haven't done any of the desserts yet or marinades, but there are lots of those too.

Negatives: No photographs, plan "textbook style" printing and paper that stains easily, No nutritional information

I would have knocked it down a star for no nutritional info since most vegetarian cookbooks contain them nowadays since some are vegetarians for health and some for compassion but the health target marget misses out without easy-to-compute nutritionals...but this book was printed 12 years ago when it wasn't as common to find and compute nutritional information...so I threw em a bone and wasn't so picky.I really don't care about photogrphas in cookbooks because I can pretty much picture the dish by reading it, but I know some do care but I DO always like to have nutritional info as I do track what goes in...You may not, so it's noted either way.

Level: Very easy to follow instructions. No one should have difficulty with this one getting the dish right or finding family-friendly AND gourmet dishes as well. Good variety.

Conclusion: A worthy book to shake things up on the grill whether you are in a rut grilling burgers and chicken and want some healthier but tasty options or if you are a full vegetarian who loves that chargrilled taste as much as I do on ANYthing.

I bought a used copy of "The Vegetarian Grill".I received it promptly and was very pleased with it's condition.I'm excited to start using the recipes within, on my grill this coming month.I've bought into a local CSA, (Community Supported Agriculture) project.Starting mid-July and the 12 weeks following, I will be getting a box of 'locally grown' fruits and vegetables each week.Thanks to the vendors' prompt and reliable service I'll be ready to grill!

Love this book. It is not only full of a variety of great recipes but it has useful tips and suggestions as well. My husband thought he was going to have to do away with the grill when I switched to a vegetarian lifestyle. This book has shown him that there is more to grilling than just using it for meat.

If you enjoy grilling and vegetables, you must have this cookbook. I used it at least 3 times a week all summer long, and I liked it so much I've been buying copies for other people every time I get a chance.

I have never tried a recipe that let me down. Everything has been delicious and fairly easy to make. The author does a good job of explaining what to look for as you're grilling, so it's rare for me to have something over or under cooked. Every recipe is interesting enough to be tasty, but not so outlandish that it would be out of place at an average American backyard barbecue.

There are a few recipes where the author suggests using chicken or vegetable broth, as other reviewers have mentioned. Maybe they'd be happier if the title was "The Vegetable Grill" instead? I'm not too worked up about it. This is a solid cookbook, and it definitely fills a niche that was open for far too long.

The author recommends buying either a flat grill pan or a grill wok. I bought both and have only used the wok once or twice. I would recommend to other readers to buy the grill pan along with the cookbook and skip the wok entirely.

My husband and I have been vegetarians for about twenty years and are raising our kids vegetarian too. For years I've always brought veggie burgers and tofu pups to other people's barbeque parties every summer. I thought we needn't bother owning a grill of our own because all we could make on it would be garden burgers anyway (how exciting is that? not very!) Anyway, this book has shown me how wrong I was. We recently acquired a very nice gas grill and I have been cooking up a storm on it! I've been using this cookbook and everything has been delicious. Not one bad recipe so far. I had a BBQ party of my own finally for my sons first Birthday recently and it was a totally hit. I made veggie pizzas (with the recipe from this book, although I used my own pizza dough recipe.)I grilled up all the veggies and than had everyone fix their own pizzas which I grilled for them. It was a lot of fun. Everyone gobbled them them up, raving about how delicious they were. Plus it was nice for people to see that a BBQ doesn't have to revolve around meat.

As for the comment below about the chicken stock, there is one recipe that says you can use either veggie or chicken stock. (I haven't noticed any others.) I agree it shouldn't be in the book. Vegetarian means no meat at all. I didn't see any mention about adding meat to the recipes, though I haven't read every page of this book, so maybe I just haven't seen it. I haven't seen any recipes that actually call for meat or anything. (No mention in the index either.)

So far I've made about 6 recipes from this book and they have been totally great. Plus, despite the fact that I'd say I know my way around a kitchen, I'd never grilled before and there was a useful chapter just talking about tools. (A vegetable grill rack is a *must* have for veggie grilling. I use mine constantly and would have been very frustrated had I not known about it.) Easy-to-follow recipes.DELICIOUS and not "out-of-the-ordinary" ingredients (except the noodles for chap-chae).I just visit my local Oriental Foods Korean store and pick up the needed things.I find the recipes simple and not too time-consuming, either.I have tried many Korean cookbooks, and like this one THE BEST.(Actually, the Lerner cookbook series from other ethnicities are excellent, too.)

I had always been intimidated by the ingredients lists in many Indian cookbooks then I took a class with the author. WOW! This book is incredible. Instruction is easy and clear with wonderful serving suggestions. The ingredients are easy to find in my grocery store. My favorite recipe is homemade paneer cheese (p. 165). It is super easy to prepare and always looks elegant in any dish. The paratha (Calcutta Plain Flakybread - p.82) is also very easy and tastes wonderful! This is an outstanding book for vegetarian and non-vegetarian alike.

I have cooked Indian food for about 10 years now using recipes from an Indian cooking class my mother took, but this book has given me a much better understanding of how Indian meals come together, techniques in making different types of dishes and the Indian names for the recipes and many of the ingredients, which makes them easier to shop for at the Indian grocery I go to.
Directions are clear and comprehensive, and written in a very easy, conversational style. Most ingredients have been easy to find at the regular grocery, but I prefer going to the Indian market for quality and better prices, especially on the many spices used in great quantity.
The recipes are absolutely DELICIOUS! Everything is extremely tasty, healthful and filling.I feel so much better eating this food than almost any other.I've tried recipes from pretty much every section of the book, and some have become permanent features in my regular repertoire.You MUST buy this book!

I am really enjoying this cookbook.I think you need to use it in conjunction with a book that has more information about diabetes and food components, (even if they contain meat recipes) however, the recipes in this book are wonderful.I tried vegetarian cookbooks and experienced difficulty with my diabetes.With this book and more study, I can live without meat. I have not found any other vegetarian books on the market and am grateful to have found this one.

This book has a recipe for vegetable stock that is worth its price alone.It will save a lot of money to make this myself.

We purchased this book as a gift to a vegetarian grand-daughter.We read some of the recipes and decided to try them ourselves.They are delicious and we really appreciate the way the author suggests optional ingredients.It is very easy to add animal products (meat, cheese, broth), if that is your interest, but the pure vegetarian recipes are deliciious on their own.

As a vegetarian who loves to cook, I have lots of veg or veg-friendly cookbooks, but this one is my absolute favorite.I trust it completely-- every recipe is delicious.My favorites include the light quiche-like vegetable tarts (I started with the tomato and chard tart recipe, but then branched out into mushrooms, broccoli, leeks, etc, as my mood strikes) and the broccoli salad with chili lime basil dressing.The simple stir-fry tofu made for this salad is the absolute best tofu I've ever had-- the only trouble with it is how hard it is to refrain from eating it so that enough ends up in the salad!

A "Zen" approach to cooking?The book features an essay by Eido Shimano roshi, and the author is informed by her experiences cooking for the sangha at Dai Bosatsu monastery, but this book stands most prominently as a fine vegetarian cookbook, light on dairy ingredients and hard-to-find items.The recipes are clear, uncomplicated, and my own "success" rate with them has been very high.

The book's sections are organized into breakfast ideas, an excellent chapter of soup recipes (check out the minty lentil soup - a lentil soup primavera?!?), mexican ideas, pizzas!, great salad ideas, and desserts.Crepes and polenta are also introduced to the beginner or near-beginner.
