This book arrived in perfect condition. Because I have one teenager that is a vegetarian and one that is a meat lover I needed inspiration and the ability to cook one meal for everyone instead oftwo different meals. This book has awesome recipes. I prepared 8 recipes from the book and they all have been pleasing to my vegetarian as well as my meat lover. The recipes are easy and I love the fact that it's a time saver because cooking one meal instead of two quicker. It also explains meat substitutes in great detail.

The only downside is that you wind up dirtying more dishes to keeping the meat and meat stuff separate. This isn't a downside to the book, only to the method.

I'm not a vegetarian but I fine this book to be very interesting and handyin case I do have guess that doesn't prefer meat.What I like most about this book is that it provides helpful hints for stocking your kitchen (what cookware, cutlery, gadgets, and small appliances you might think about buying), and then goes through Meat Alternatives 101 (both classic meat substitutes and newer models) in case you need a refresher.

Plus it also has a host of handy and heroic sidebars, covering an assortment of helpful hints and techniques, from Jeremy's sauce basics (on page 7), recipes for sauces hollandaise and béchamel (on page 168), bacon bests (on page 195), and stock reducing (on page 88) to A.J.'s hints for draining tofu (on page 44) and baking tofu (on page 48), and much more. My family really like a few of the dishes on here so, don't hesitate to grab this book because it does have delicious dishes for everyone. Cause that's what it's all about.

The enticing title says it all. There is a reason you do a double take! In our case, this book filled a niche'.Due to hereditary heart disease, my sister had to become a vegetarian and the rest of her family were definitely not. Dinner wasn't fun. Meal choices were awkward and sometimes very time consuming. Now, one cookbook can keep life simpler, everyone happy, and her healthier.

There are some of the usual recipes like sauces, soups and salads. Alternatives also please the palate! Just because a person cannot eat meat does not mean they live by tofu alone. Hearty grains eaten as part of a meal make complete proteins. It introduced me to recipes for quinoa that I actually LIKED!! Sure, there are unusual food combos in this book but be brave! I was very pleasantly surprised to not miss the meat.Recipe variations are full of flavor with or without chunks of dead animal. My sister loves to be able to use what she already has in her kitchen, prepare a menu of meals for the week and have a coordinated grocery list instead of a "what I can eat" and "what I cannot eat" issue. Of course, she misses good prime rib with horseradish but has learned how that condiment can spice up other dishes too! Enjoy. I know it was a gift worth giving.

We have a lot of vegetarian friends, so my wife and I thought this would give some interesting and creative ideas.

Not really.Take a recipe, make some of it with a meat alternative of some kind.There you go.The recipes themselves were okay, but it seems like this book promised a lot more of a "aha!" concept which would really help please everyone.Mostly it was common sense substitutions to common kinds of recipes. This book is filled with nutritional information, helpful advice about tools to make preparation easier, and recipes that take the guesswork and confusion out of preparing delicious and healthy raw food dishes. I consult my copy so much that the pages are already worn and stained, the true test of a good recipe book.

Lisa Mann's The World Goes Raw couples an intense and impressive knowledge on all aspects of raw cuisine with a concerned and caring writer's voice that makes the reading of the book feel like a chat with a very informed best friend. The research and experimentation that went into making the book are extensive, and the reason Lisa gives for writing the book is compelling. Ms. Mann details her own journey into good health and then invites you to come along. The result is a book that offers not only information on all aspects of the raw food life, but also the easy-to-follow blueprint to create a healthier and happier life for yourself. The book feels like a gift of possibility. It is uplifting, creative, and inspiring. I have already tried many of the recipes and have met with huge success. The "fondue" featuring a seductive blend of dates and ginger - expertly paired with pineapples - is simply divine. The "cashew cream" over cinnamon-dusted bananas is "to die for", and there is so much more. This cookbook is like none other I've ever owned before - and I've owned plenty - and is a must have!

Everything in this book is written in metric first. Such as 30 ml of breatd crumbs and so on. Then there is a regular conversion which makes it hard to read when you are cooking.Some of words used for the ingredients aren't familiar but usually they have the regular "American" version written next to it to help such as 2 courgettes(zucchini).Still it is a useful book if you need a different recipe every night of the week.

I was looking for a vegetarian recipe book because I want to eat healty, so I was very surprised these recipes used a lot of 'canned' foods.Plus, it was difficult reading the recipesbecause of theMetric/Imperial/ & American measurements and the type is pretty small. On the plus side, with 1000 recipes I'm sure to find many new ideas.

The cover has the most beautiful picture you've ever seen, but you better enjoy it because that's the last one you'll see in this book!!The many recipes might be great, but it would be nice to have fewer recipes WITH gorgeous pictures.That way, you can quickly get an idea if you want to read the recipe and possibly make it.Plus, it wouldn't be so boring.Sorry, but I took one look at the fat book with zero pictures (I don't think even an illustration), and sent it back.I wish she'd do it again with another revision as she's got most of the work done.Then, I'd be very happy to pay twice the present price!!

This is the best book I've ever read on grilling vegetables.Everything you need to know from cooking times to seasoning to how to combine grilled items for meals.This is complete, well organized and easy to use.While there are simple prep instructions on every vegetable you could possibly grill, there are also impressive recipes that are suitable for dinner parties. I've already made many of the dishes in it within a few weeks and they have all been delicious.

Some of these recipes are decent and I appreciate the advice on grilling fruit, but this book is for people who want unnecessarily elaborate recipes that often only nominally call for a grill.Many of the recipes require one to cook most of the meal on a stove or in an oven and then merely finish it on a grill.Potato pancakes, corn chowder, and burritos should not require a grill.Putting grill marks on a quesadilla does not improve the flavor, it only prolongs the cooking time.

I would have preferred something closer to Alice Waters' veggie books: detailed advice on how to choose and grill a variety of vegetables along with a handful of recipes for each one.

Look elsewhere if you want recipes that actually benefit from the use of a grill.Purchase this book if you absolutely must use a grill for all recipes come hell or high water.

This book has loads of tasty recipes- starters, mains, desserts and everything in between. The only downside is- there aren't any pictures of the dishes, which is sometimes nice for a bit of inspiration.

There are some really great recipes in the book.They look really healthy and different than our normal fare.Many of them are pretty labor intensive, soI would probably only use it on the weekend.

My husband and I are just starting our new vegan diet after reading many books about how bad animal products, all fat and dairy are for your health.
This book is very helpful, with easy to follow recipes and lots of useful information. I have made the bean dip, tofu mayo, seitan roast and many others. I found them all simple to make and very good. I will be using this cookbook a lot as I continue to learn this new way of cooking.Although we have had to buy lots of new items we have saved much more by eliminating meat, fats and diary. It is even easier now to find places to eat that serve vegan. I haven't made any of the many dessert recipes but they all look really good.

Great whole foods recipes, delicious and easy to make! There is no reason to settle for the Standard American Diet (SAD) of bland colorless wads of meat made palatable (and addictive) through the addition of fat, salt, sauces, and spices, when you can have beautiful delicious variety that builds up your immune fortress against disease.

When someone says TOFU I say YUCK! No Way! But I will tell you that this cookbook is excellent! Tofu and all! Everything I have made tastes great. I made a full mexican stlye meal for my family and extended family (all will NOT eat tofu) and they all loved it. They took the left-overs home. I never did tell them that I used tofu or that is was vegitarian. I used tofu, that soybean meatless meat stuff and nobody knew. (I made Spanish Rice, Border Beans and Fajitas.) I also purchase the 20 Minutes to Dinner Cook Book by the same author and it is good also. The Chinese Noodles are to die for. The pasta salad is excellent.I still cannot believe I am eating tofu and liking it. Great source of protein if your not a meat eater. It has no taste-it takes on what-ever flavor you are cooking it with. You don't even notice the texture. You don't notice it at all. Who would have thought.My Mom who is against anything healthy keeps coming over to see what I am making for dinner. I just don't tell her it is tofu or healthy and she eats it. Someday if she finds out she will kill me! She is anti whole wheat, aniti vitamin, anti tofu. She loves meat, smokes and sits on the couch waiting for a heart-attack. Great Book! ... Read more

Don't remember how I stumbled onto this book about 10 years ago, but I'm sure lucky I did.Not only is it my favorite cookbook, it's probably my favorite book just because I use it more than any type of book and it's provided consistently amazing results.My parents say I'm a really good cook, I don't really think so.But this book consistently turns out food that I actually WANT TO EAT, tastes like something from a really good restaurant, and is simple enough to produce.For example, I actually used several recipes from Field of Greens on a camping trip where I fed 28 people.Everybody was so quiet while eating, I thought "great, people don't like the food".My anxiety at their silence overwhelmed and I asked "why is everyone so quiet?Is there something wrong with the food, please be honest and tell me."I was shocked when the response was 28 crazy positive responses of everything from "I'm too busy eating this awesome food to talk", "I'm trying to eat fast so I can get more before anyone else finishes", to "this is the best food I've ever had camping, it's like restaurant food".One guy came up afterwards and said it was the best food he'd ever had, not just camping.I am not making this up, people!I need to get a new copy of the book because my copy is so worn out.I don't always follow the recipes exactly like when I don't have fresh herbs or something and substitute, but the recipes always still turn out just fine.My only complaint would be I'd love to see this in a vegan version (still looking for truly humane sources of dairy and eggs).

I'm not vegetarian, though I do have leanings...but I find myself coming back to this book whenever I am stuck for a meal. The recipes are incredibly diverse and delicious -- wonderful salads, soups, curries, stews, pastas, risottos, breakfast goodies, desserts: most of my daughter's favorite meals come straight from Annie Sommerville's well thought out and lucidly written book (it was her favorite birthday present when she turned 21). Along with the recipes are a myriad of helpful tips for various small details encountered in the preparation of these recipes, which are not complicated but are based on the principle of fresh ingredients presented to accentuate that freshness. Nothing canned beyond tomatoes are ever called for; spices are ground and often roasted as part of the prep: the cooking requires only a willingness to submit to the preservation of the ingredients' integrity. The reward is a meal where the love that went into it is as evident as the actual foods used. The follow-up book (Everyday Greens) is also wonderful, though I favor this one slightly. Its predecessor by Deborah Madison (The Greens Cookbook) is also very good but the recipes are heavier -- more butter and cream, for instance. They make a great triumvirate, but I would definitely start with Field of Greens.

It's rare that a cookbook consistently produces excellent results, recipe after recipe.Well, Fields of Greens is one of those rare cookbooks.
The book exudes the author's love for cooking, for vegetables, and for pleasing the palates' of her customers and readers alike.When she cooks, she makes love to her food: one can just picture her going to the farmers' market or her garden picking the most delectable vegetable or fruit and smelling the produce, then cooking up some delicious recipe and then sharing it with her guests, customers or readers.No kidding: go ahead.Read the book and you'll see what I'm talking about.
A vegetarian friend of mine recommended the book.My husband and I are not vegetarians, but the recipes in this cookbook are so good that you forget there isn't a single morsel of meat.Each recipe is concise, well explained, and there are many hints and suggestions that one may find useful. Everything is made from scratch, and therefore some recipes are laborious, but the end result is surely worth the effort.
Whenever I want to impress guests, I cook from this cookbook.I've tried many recipes, and each time they come out very, very good.Try the mushroom risotto (perfection!), the winter squash and leeks turnovers, or the African vegetarian stew.Or maybe one of the soups, pizzas or deserts.
I hope that you too will find this book a wonderful addition to your classic cookbook collection.

This is a wonderful little book. I bought it college but didn't use until after I got married and wanted to start cooking. My husband absolutely loves the meals I prepare using this cookbook and they are easy enough that he can make them up too. Plus they are so yummy and really are nutritious meals.

I wished I would have used this book in college but I couldn't be bothered when the dollar menu was so effortless. Now the meals in this little book have become a staple of my everyday eating and it really has helped me to eat much much better.

Oh yeah, and they really are affordable. I can't say enough good things about this cookbook. Very highly recommended.

I became a vegetarian about a year ago, and had some difficulties coming up with stuff I like to eat. I'm the type of person who is very picky about what I eat.

With the busy lifestyle I lead, and on a strict budget to adhere to (I'm a college student), I figured buying this book would be well worth a shot. When I received it, I looked at the recipes and they were manageable, not like some of the cookbooks out there that require skills or a lot of ingredients to make. A lot of these recipes are also quick to make. However, the estimated time the book provides per meal is a little off. I'm not an ambitious cook, so I'm not exactly the type of person who can whip things up extremely quick.

All in all, I love this book. This is by far the best vegetarian recipe book I've bought so far, and everything is delicious.

I learned alot and I've been cooking for years. Vegan is new to me and I learned so much. These recipes are great and easy. Its basic but not too basic. My 14 yr old truly benefitted from this book. She learned alot and the recipes didnt intimidate her. She is very new to cooking. I checked this out at the library. Its great and I've decided to buy myself a copy.

When I looked at this book in the bookstore I just looked at the titles of the recipes, all of which sounded really good. For example the Pad Thia and Pasta with Greens. The sauce for the Pad Thia was disgusting, it contained ketchup, soy sauce, and sugar to name a few items. Not at all authentic or palatable. The pasta with greens sounded good but it calls for a creamy sauce made from cottage cheese, tossed with pastaand kale. This book is okay. It's got a lot of good ideas to flip through but some of them don't turn out as well as you'd like :] And I wish this book was more oriented to every-day sort of meals. There are a lot of ingredients in this book that I have never heard of before! however, there is a guide that details nutrition for vegetarians and there's a glossary type thing for the ingredients that they use in some of the recipes. Agood book.

...especially young ones. I have now been a vegetarian for five years and rarely use this book any more but it was GREAT when I was first starting out. Lauren Butts was sixteen when she published this book and the recipes are all geared towards kids in that age group - both in simplicity and taste.
When I bought this book it was getting a lot of buzz because it had just been published by such a young author. Judging by the date of the last review, I'm guessing it has fallen off the radar. I, however, would still recommend this book to any teenage vegetarian.

This is a great cookbook. I recently checked this book out of my local library and the soup and stew recipes are great...especially for this time of year. I was impressed by the fact that most of the recipes are vegan or could easily be adapted. I highly recommend this book.

I actually bought this book because my dr said I needed to go on a low-cholesterol diet and the low-cholesterol cookbooks weren't going to help me with the transition because I found those recipes bland, bland, bland.So, I started checking out the vegetarian cookbooks.I wound up with 6 cookbooks between the 2 subject matters. Every single recipe in the One-Dish Vegetarian cookbook has been absolutely delicious even to a mid-western raised "where's the beef" type person.Some of the recipes sound strange (for example, Spaghetti with carmelized onions) but don't let that keep you from trying it.This was actually one of my favorites.Only one word of caution...the portions are very large.I started splitting the recipies in half and my husband and I still had enough leftover for my lunch the next day.I did NOT half the seasonings though. I do have one tiny complaint--the "one-dish" name is misleading.You will have a little dishwashing to do....

The recipes are delicious and nutritious, but require way more than one dish to prepare.In fact, I had a whole load of dishes on my hands after making Spinach-Lentil Pasta.It was worth it, but I thought this book would have simpler recipes.Also, the writer openly admits to not being a vegetarian herself, so if you want basic, staple recipes for a vegetarian diet, get a different book. However, it is a nice addition to a veggie library.

2-0 out of 5 stars Should be titled "The Beginner's Meatless Cookbook"
I got this book because I am trying to eat healthier, and that means less meat in my diet. I'm also trying to eat less processed foods. I would consider myself an experienced cook. I am by no means a professional, but I've been cooking for close to 25 years now, if you count all the times my mom and I baked cookies and cakes together while I was a kid. I know my way around a kitchen, but I have some room for more learning, too. It's just me and my husband that I have to cook for, so the layout of the recipes was what drew me to this book in particular. Each recipe is written for only two people, and even has the recipe halved as well so you don't have to do the math on your own. It's a great idea, and what saved this review from only having one star, but the quality of the recipes is what makes this book such a failure.
This book was a bitter disappointment. While I was not looking for a gourmet cookbook, I also don't need to be told how to make a grilled cheese, either. And this book actually has a recipe for grilled cheese. To it's credit, though, it adds tomato and basil, as if I couldn't have figured out that variation myself. This book also includes recipes for baked potatoes, baked sweet potatoes (because the recipe is so completely different for the two varieties), and mashed potatoes. The last straw with me (and what prompted me to actually post this review) was when I read the recipe for "Quick Tomato Sauce". The ingredients consist of: olive oil, onion, garlic, oregano, cayenne pepper, and A CAN OF TOMATO SAUCE. I don't call that a recipe, I call that spicing up a store-bought sauce. Personally, if I'm buying a cookbook, I feel that it should have recipes in it that I wouldn't know how to make without the recipe.
This book's biggest saving grace is that it has 42 pages of cooking tips as a preface to the actual cookbook. This area has some good tips on how to pick out the best fruits and vegetables, and the best way to store them once you get them home. It has a section on restricted diets, such as dairy-free, sugar-free, and wheat-free, and what substitutes can be made for them. There is also a helpful section of cooking tips, such as how to fry your own taco shells, how to pit olives, how to remove the garlic smell from your fingers, how to prevent the eye irritation caused by cutting onions, and how to cut and pit an avocado. I wouldn't say that this section makes the cost of the book worth it, but if you've bought it already, the information there and maybe a couple of REAL recipes make it worth not getting rid of.
If you're considering buying this book, and you're NOT absolutely clueless about cooking, I would certainly NOT recommend this book. I would suggest you try "The Best Vegetarian Recipes" by Martha Rose Shulman (ISBN 0-688-16827-2). It is obviously written by a cook who's got a lot of experience, and contains practical and creative recipes for those who choose not to eat meat. Another good pick is the "Vegetarian Times Complete Cookbook" (ISBN 0-02-621745-7). This cookbook reminds me of the book that my husband got when he was in culinary school. Thus, there is a lot of information at the beginning of the book about different vegetables and fruits, good reasons to become a vegetarian (which I think is kind of like preaching to the choir to put that in a vegetarian cookbook!), and kitchen techniques. There are also photos throughout the book of several dishes. This book is geared towards those who are just getting started with a vegetarian diet, but unlike the simplistic "Intimate Vegetarian", this book actually assumes that you've been in a kitchen before.

This cookbook would be a good buy for someone newly cooking for him or her self - a good gift for a college student. It has a range of easy vegetarian dishes, shopping and vegetable prep tips, and recipes scaled to serve one or two people. It's really a book for the neophyte cook, someone looking to save money, make themselves dinner, and not go to extra trouble or expense.

More experienced folks looking for innovation will likely find it too basic and repetitive. Someone looking for an encyclopedic vegetarian equivalent to "The Joy of Cooking" would do well to seek out Deborah Madison's "Vegetarian Cooking for Everyone."

I purchased this book from ... and then returned it.It wasn't that I felt the recipes were bad, just not imaginative.The author spent many pages on very basic things like things to add to a green salad, but nothing seemed all that diferent or inventive.I was hoping for a few more recipes that showed some unique touches and instead got scaled back basics.In the future I will just make 1/2 of my favorite recipes from other vegetarian cookbooks I own.

This book may be good for a new vegetarian or someone trying to become vegetarian since the smaller recipes let you try different things with fewer leftovers (in case you don't like it!), or for someone who entertains and sometimes has a mixture of veg & non-veg guests.It would allow them to make a separate entree for the veg guests.

Since I'm not the greatest cook, I was so excited when I stumbled across this book and found practical recipes that any guy can follow. They are simple and really tasty, with easy-to-follow directions and helpful hints. Plus, the recipes are just the right size for when I'm either eating on my own or entertaining a friend for dinner. I bought this book after seeing it at a friend's house, and being interesting in a few of the recipes.After spending more time reading it, I think this book is a little on the basic side.However, that is a strength as well as a weakness. Most of the recipes are fairly simple, and require few, fairly easy to obtain ingredients. There is a wide variety of ethnic food, so if you are looking to branch out, this might be a good place to start.However, a few of the recipes are just "wrong" - not very authentic - possibly due to simplification.So it has some merit, but if you find a dish you like, you should probably find other variations of that dish from another source.

We received this cookbook a few years ago as a gift, and I have to say it is one of the best cookbooks I have ever seen - and we have many!Although there are more popular, fancier cookbooks out there, I find myself coming back to the recipes in this book again and again.My husband and I are not vegetarians, but we love to eat all kinds of food and try to be healthy.The recipes in this book are delicious, easy to follow, and the pictures are a big plus!The very first thing we made from this book was the vegetarian carbonara, and to this day it remains a family favorite.Really, can't say enough good things and I highly recommend that you pick up this book - vegetarian or not- it will give you some fantastic ideas.

It's easy for vegetarians, especially those who are relatively inexperienced cooks, to get into a rut and run out of meal ideas. Well, fear not, herbivores: this wonderful cookbook has come to your rescue! The recipes in here are delicious, hearty, and healthy, with a special emphasis (it seems) on comfort food. Special raves are in order for the Vegetable Korma (a yellow curry), the variety of easy-to-make gourmet pizzas, and the heavenly Sweet & Sour Mixed Bean Hot Pot (I think it's the sauce that really does it). Many of the recipes show how to make vegetarian versions of dishes traditionally made with meat, using substitutes like eggplant to achieve that meaty quality you might crave. Almost as scrumptious as the recipes themselves are the glossy, colorful pictures, which make this almost as much a coffee table book as a cookbook. I almost want to rip out the pages and eat them. Even if you're not a vegetarian and are simply looking to eat more healthfully--and these recipes prove that one never has to sacrifice great taste for health--you will enjoy sinking your teeth into this book.

Yo soy vegetariana estricta (vegana o que no consume ningun producto de origen animal, ni leche, huevos, etc.) y mi esposo es un carnivoro desenfrenado que fue criado sin comer muchas verduras, por endeconsume mucha grasa animal y hay muchisimos vegetales que no conoce. Con este libro he logrado derribar sus prejuicios respecto a que las verduras son intrínsecamente malas. He logrado que coma muchas legumbres, que no las conocia ni de nombre y de paso he adquirido la capacidad de crear platos quese lucen en cualquier fiesta o reunión social.

Las recetas son buenísimas, y me encanta la recopilación de recetas italianas, griegas, mexicanas y de tantos otros países.

La fotografía es lindísima al punto de que mientras ojeas el libro para decidir que hacer, se te hace agua la boca.

Un excelente libro para tu biblioteca personal y ademas una opcion para regalar :D

I'm a 25 year vegetarian and thought I was pretty astute on the subject. Not. After reading this book it just made me more aware of how much I have to learn. For example, did you know that the gladiators were referred to as "the barley boys" since they NEVER ate meat, only barley to bulk up? Not only is the story of vegetarians totally amazing, but the recipes offered from each of the "famous vegetarians" are amazing. Mr. Berry even learned the Latin/Italian dialect of Leonardo Da Vinci in order to translate his amazing recipes.

Even if you're not a vegetarian, you'll find this an amazing read. Wonderful, wonderful, wonderful and so insightful. Just loved it and have bought several copies for friends.

I was really surprised by some of the people who were vegetarians.It's nice to know that such highly-regarded people of intelligence, compassion, and strength, were vegetarians.It's strange that in our modern society, people who are vegetarian or vegan are often looked down upon as idiotic or somehow aberrant; I suppose it comes with the territory of living a mostly cruel world full of bitter and jaded folks, but this book proves them all wrong.The recipes are also quite good.I would certainly recommend this book for all vegetarians and those curious about famous vegetarians.

a time or feeling fast fading from the landscape.The earnest pen-and-ink drawings of famous vegetarians, the surprisingly fresh biographical sketches, and a general feeling of creativity and gentility all call forth an era for which the word "nostalgia" may too soon apply.As you may gather, the recipes are just part of the appeal, although many (have even vegetarians become so jaded?) seem to have forgotten the homely joys of well-prepared grains and vegetables. Cloris Leachman's baked potato recipe sounds good & I'll probably get a charge from eating asparagas a la Plutarch. But it's Berry's fine sensibility, along with a delighful expansiveness (exemplified by the inclusion of early transcendentalist philosopher Bronson Alcott), that earns this book a place on my shelf, where it would make sense between a John Muir or Emily Dickinson collection and "Walden."

The author has come up with authentic recipes(or reasonable fac-similes thereof) reflecting the tastes of famous vegetarians throughout the ages. Anecdotal sketches give life to each of the 32 celebrities from Plato andPythagoras to Tolstoi, Gandhi andGeorge Bernard Shaw along with"contemporaries" like Paul McCartney and Isaac Bashevis Singer.Mr.Berry writes gracefully, and the 80 recipes are not only fascinating,but have been kitchen tested tested by the author for"savoriness." Many recipes are unfired. The book is fullyreferenced with footnotes(in the back). This is a superb book!

Rynn Berry's "Famous Vegetarians and their favorite recipes" presents an overview of famous vegetarians in history. Each biography of the 30 famous vegetarians is about 3-6 pages long. It is by no means a comprehensive nor referenced work (not that I'm questioning his sources, but that being that this book features short pieces of fascinating individuals, it only makes sense to provide a "works cited" list or a reference list for those who are interested to pursue their research). I truly wanted to like this book. I like travelogues to tell the reader about the culture while delving into the recipes.

Unfortunately, I found the recipes were actually the same meat based dishes from her other book "Turkish Cooking" with soy subsitutes where the meat would be. Broth becomes non-meat flavored bouillon. I'm upset to have found only a handful of actual vegetable based recipes. Alas, vegans will not find anything of use in this book.

I then flipped through the sister book, "Turkish Cooking," to find the same layout and identical recipes listing the originally intended meat or fish. Dear seeker, I'm very disappointed to say that you are better off purchasing the other book for the real deal and seeking another title to truly find Turkish vegetarian recipes.

This cook book includes many good recipes, however in most recipesmeat/chicken/fish originally required and the suggested replacement is flawared soy based meat substance such as tofu, etc. That is OK if you are not a vegetarian but trying to cut meat, but if you really are a vegetarian, smell of those items are not desired. For this matter the recipes are not really vegetarian ones, at least not for me. I still praise the book as successful one because it includes many exceptionally good options. I wished it had more stew recipes though.

This cookbook is easy to understand and does not require a lot of cooking skill.The recipies are easy and delicious, and a lot of them use the same basic ingredients so you can mix and match with appetizers and dinners.I am very happy with my purchase.

We just got back from a wonderful trip to Istanbul and Greece and I must say upon returning I was looking for some more of those wonderful meze and the Turkish Delights (yum).So I took a chance on this cookbook since there aren't many (any others) out there that are vegetarian never mind vegan!I'm really enjoying this cookbook - the first 76 pages (out of 249 so that's not a big deal) are indeed history/travelogue but its kind of fun to flip through and the pictures were of some of the same places we visited so that was neat.Just before the recipes there's a section on subsitites and here the author gives you the info you need to find certain ingedients that might not be in the local supermarket - e.g. there's discussion of egg substitites and where to find them, non-dairy butter substitites and where to find them, meat/fish substitites and where to find them etc. In the recipes there are some ingredients like non-meat chicken broth that is called for.Why not just go with a vegetable broth?I did.Anyway, the recipes have all been great so far.I've tried mostly mezes so far - the fried carrots, the fried eggplant with two sauces, stuffed grapeleaves (mine never turn out looking like they should - need more practice...).There are wonderful soups in here - the only one I've made so far was the hot and spicy soup, but others like the lentil look good too.I definitely recommend this cookbook.I had a *really* hard time finding vegetarian dishes in restarants in Istanbul which is why I enjoyed a lot of mezes, so I can see why there are recipes in here (like Sultan's delight) that use meat substitutes. I think this is quite authentic and the author did a terrific job at trying to bring the Turkish flavors to the vegetarian table!

I find this book disappointing. Firstly, one fourth of the book is taken up by the author's travel accounts. It's a different story when an author gives some background to each recipe. But it is not the case here and I find the result of those two books rolled into one very awkward. Second, and more annoyingly, many recipes rely on meat substitutes. I have always found it sad and the sign of a certain lack of imagination when vegetarian cooking tries to mimick meat-based dishes. It is particularly regrettable in a book on Turkish cooking which has a rich tradition of NATURALLY vegetarian dishes. Which is why I ordered the book in the first place ! ... Read more
