Editorial Review Product Description Latino cuisine has always been a part of American foodways, but the recent growth of a diverse Latino population in the form of documented and undocumented immigrants, refugees, and exiles has given rise to a pan-Latino food phenomenon. These various food cultures in the United States are expertly overviewed here together in depth for the first time. Many Mexican American, Cuban American, Puerto Ricans, Dominican American, and Central and South American communities in the United States are considered transnational because they actively participate in the economy, politics, and culture of both the United States and their countries of origin. The pan-Latino food culture that is emerging in the United States is also a transnational phenomenon that constantly nurtures and is nurtured by national and regional cuisines. They all combine in kaleidoscopic ways their shared gastronomic wealth of Spanish and Amerindian cuisines with different African, European and Asian culinary traditions. This book discusses the ongoing development of Latino food culture, giving special attention to how Latinos are adapting and transforming Latin American and international elements to create one of the most vibrant cuisines today. This is essential reading for crucial cultural insight into Latinos from all backgrounds. Readers will learn about the diverse elements of an evolving pan-Latino food culture-the history of the various groups and their foodstuffs, cooking, meals and eating habits, special occasions, and diet and health. Representative recipes and photos are interspersed in the essays. A chronology, glossary, resource guide, and bibliography make this a one-stop resource for every library. Customer Reviews (1)

Editorial Review Product Description Bistro Latino is homey, appetite-inspiring food that brings the big, sunny flavors of Latin America -- with a touch of the Mediterranean -- into your kitchen. It's cooking that's familiar -- with a twist. Bistro Latino is food that is meant to be shared and enjoyed with family or friends. If you're having a get-together, try serving a selection of colorful Bistro Latino cocktails (Pisco Sours,Caipirinha, Mango Mimosas, Passionfruit Batidas) and savory appetizers (Latin Crab Cakes, Spicy Vegetable Empanadas, Tuna Ceviche with Coconut, Goat Cheese and Basil Tamales). Or make your dinner party a family-style affair with Ecuadoran Shrimp and Corn Chowder, Chicken in the Pot, Latin Style, Colombian Pot Roast, or New World Paella. Round out the meal with side dishes like Roasted Corn and Garlic Rice, Potato-Chipotle Gratin, and Mashed Sweet Plantains. Bistro Latino will give you a whole new vocabulary for everyday cooking. What is Bistro Latino? It's skewered shrimp, marinated in a mixture of smoky chipotle chiles and sweet guava paste, grilled to perfection with juicy chunks of pineapple. It's gazpacho like you've never had it -- a refreshing soup of blackberries, strawberries, and peaches, sparked with a little minced red onion and cilantro. And it's mashed potatoes, kicked up Latin style, whipped together with roasted garlic and black beans. Bistro Latino is homey, appetite-inspiring food that brings the big, sunny flavors of Latin America -- with a touch of the Mediterranean -- into your kitchen. As with traditional bistro cooking, Palomino emphasizesmodest, down-to-earth food. However, the similarities stop there. BoldLatin flavor combinations and ingredients transform simpledishes. Fish Baked in Fresh Tangerine Juice and Parsley blend sweetcitrus, woodsy mushrooms, and tender whitefish into an entréeteeming with brightness. In fact, the beauty of Bistro Latinois the simplicity. All the recipes are easily prepared at home andrequire only modest culinary skills. Palomino also does an outstandingjob laying out the basics of Latin cooking. The ingredients glossaryis extremely helpful to anyone new to the cuisine, and the recipes forbasic sauces such as Aji and Hogo, as well as those for salsas andvinaigrettes, are excellent. Bistro Latino is an exciting newapproach that guarantees Latin cuisine will never be the same.--Mark O. Howerton Customer Reviews (3)

Editorial Review Product Description Growing up in her mother's and grandmother's kitchens, Daisy became an expert in traditional Latin-American cuisine. Here she "Daisifies" those classics and includes a hearty sampling of dishes from her travels across Spain, Puerto Rico, the Dominican Republic, Peru, and Argentina. To Daisy, food is about bringing family together, and so she peppers her collection with anecdotes and family vacation photos. Each recipe is as much about the memory the flavors recall as the love that goes into preparing the dish; for her, the succulent grilled meats of a parrillada bring back memories of a Christmas spent floating in a pool in Argentina, while the flaky, gooey vegetable potpie recalls an extravagant dinner party in the Dominican Republic. As a busy mother of four, Daisy lives the time crunch every day and has crafted her recipes to be quick, adaptable, and easy to understand. She deftly demystifies the ingredients of the Latin-American kitchen, explaining everything from the spectrum of color in plantains to the degrees of heat in chiles. With this range of mouthwatering recipes, you can plan your day with Daisy: rise and shine with the rich aromas of chile-spiked hot chocolate; power up with a midday empanada with your pick of five savory fillings; and start a tradition with a night of tantalizing tapas. Why eat dull when you can eat delicioso? Customer Reviews (26)

Editorial Review Product Description This book presents a bilingual introduction to five Spanish-speaking countries and one commonwealth: Mexico, Cuba, Colombia, Dominican Republic, Nicaragua, and Puerto Rico. Each chapter combines simple, tantalizing recipes with general and cultural information, suggestions for additional learning opportunities, vocabulary, a short fiction reading list, and Internet resources. The Latino population is the fast-growing minority in this country, and educational resources for and about Hispanics remain scarce. The purpose of this bilingual work is two-fold: to introduce young Americans to diverse Latino cultures and to build cultural awareness among Hispanic students. It is also hoped that the material will help bridge the generations in Hispanic families—between older family members with limited English, and younger members with limited Spanish. Focusing on countries with significant immigration populations in the United States, this book offers educators and librarians tools to explore the cultures of Mexico, Cuba, Puerto Rico, Dominican Republic, Nicaragua, and Colombia—with geographical and statistical information, history, recipes, resources, learning extensions, and sources for further information. Chapters present background information about the countries, including images of the flags, maps, and coats of arms, followed by simple recipes that can be prepared by young people. Recipes feature ingredients and agricultural products of the countries with brief descriptions and illustrations. A list of learning opportunities and a more detailed learning launch helps educators extend learning throughout the curriculum. Brief English-Spanish vocabulary lists are also included. Resources for further learning direct users to pertinent Web sites and print materials. The book concludes with a glossary of cooking terms and techniques, utensils, and ingredients and a general bibliography. Grades 4-8. |

With tropical fruits and Latino veggies and tubers (malanga, yuca, etc) this introduces most of us to an exciting whole new venue of possibilities. It's all here, drink suggestions and Breads (you've got to try the Yellow Arepas, they're worth the book itself).Amazing array of salsas and mojos, such as Ruby Grapefruit, Shallot and Cilantro Mojo (unblievable flavors). The offerings here are spectacular, Grilled Flank Steak over Mushroom Ceviche.Who would have thought of that, ceviche applied to small button mushrooms which this guy found in Peruvia through his dad's barber. Knockout dishes like Original Plantain Coated Mahimahi served with Tamarind Tartar Sauce.Avocado and Pistachio Crusted Gulf Snapper with Black Bean Sauce. Sugarcane Tuna with Malanga Puree and Dried Shrimp Salsa. Mango and Mustard-Glazed Salmon with Calamari Rice. This review could continue to speak of creative dish after dish.Desserts are equally attractive, with fruit and flans and rice and a neat dish to dazzle your guests from Cuba, Brazo Park Avenue with Banana Mousse. All nicely packaged by one of the best, Ten Speed Press, with class and style, color photos and rich, vibrant text. My frontrunner for Latino cooking resource.
