The Ammonites and the kingdoms of Edom, Gilead, and Moab, situated east of the Jordan River, are referred to repeatedly in the Bible. These kingdoms were successively conquered by, or made tributary to, the Egyptians, Assyrians, Babylonians, Persians, and Romans. Jordan was wrested from the Byzantine Empire by the Arabs between 633 and 636 and has since remained an Arab-Islamic country. During the Crusades parts of Jordan were governed by Christians. From 1517 until 1918 Jordan was ruled by the Ottomans . The Early Bronze Age (c. 30002100 BCE) is marked by deposits at the base of Dhiban. Although many sites have been found in the northern portion of the country, few have been excavated, and little evidence of settlement in this period is found south of Ash-Shawbak. The region's early Bronze Age culture was terminated by a nomadic invasion that destroyed the principal towns and villages, marking the end of an apparently peaceful period of development. Security was not reestablished until the Egyptians arrived after 1580 BCE. It was once believed that the area was unoccupied from 1900 to 1300 BCE, but a systematic archaeological survey has shown that the country had a settled population throughout the period. This was confirmed by the discovery of a small temple at Amman with Egyptian, Mycenaean, and Cypriot imported objects.

In culinary terms, Jordan has many influences from Syria, Lebanon, and Palestine, and as such enjoys one of the world's most sophisticated and elaborate cuisine's. The rich Jordanian food coupled with the famous Jordanian hospitality creates an atmosphere of festivities each time a meal is served. There is a wide variety in the Jordanian style of cooking. The authentic Jordanian cuisine can range from grilling (shish kababs, shish taouks) to stuffing of vegetables (grape leaves, eggplants, etc.), meat, and poultry. Also common in the Jordanian style of cooking is roasting, and/or preparing foods with special sauces. No matter what the style of cooking, Jordanian cuisine promises to satisfy anybody's taste buds. Mealtime in Jordan is not merely a biological function, but, rather, a social event. Jordanians are generally grouped during meal time and are presented with food in a collective manner. The food was displayed with grand recipients- such as Mansaf, freekie, and stuffed or whole lamb. The guests would stand as a communal group and share from the one large portion. Today, the food has remained the same, but people have adapted to portion control and individualized food presentation. The same grand recipient is presented. However, guests fill their personal plates with the portion needed. The use of modern utensils in food handling is the norm.

Extractions: The CBRL enables scholars to undertake original research by: Field research projects have investigated the beginnings of settled life, farming, the appearance of the first cities, and market economies and the flowering of the Levant's classical and Islamic civilizations. The CBRL have also sponsored extensive epigraphic surveys in the basalt desert and Wadi Rum area, and ethnographic work, including a study of traditional farming and crops in northeastern and central Jordan. Such studies are of significant use to agricultural companies looking for drought-resistant and/or salt-resistant strains of grain. The CBRL is currently the base for a study of livestock and range-management. Tourism is a booming industry in Jordan and Syria. This growing business is exploiting the cultural heritage of the region which CBRL scholars have been actively involved in revealing. Increasingly Governments and outside agencies are emphasizing the careful development of particular areas and here the CBRL is playing an important part by channelling British expertise to fulfil particular needs.
