Extractions: By Ajita Shashidhar Indian food is typically associated with a lot of masala, spices and high calories. But if you are a health freak on the look out for Indian health food, you must try out delicacies from the Eastern Indian states of Orissa and Bengal. Cooked with very little or, at times without oil, these two eastern states offer a plethora of low-calorie delicacies. One of the most popular dishes in both the states is Pitha or cakes. If you visit an Oriya home on a festival day, there will be an array of mouth-watering pithas waiting for you. Some of the hot favourites are Manda pitha, Chittau and Enduri pitha. All the three varieties are steamed delicacies. While Enduri is a form of Idli, which is stuffed with roasted coconut and sugar, and is steamed, Chittau is a form of dosa, made out of rice and coconut ground together. Instead of frying the batter with oil on a flat pan, a little bit of water is sprinkled on the spread out batter and covered with a lid. Manda is a form of sweet cutlet cooked without oil. The stuffing is usually made out of paneer, sugar or gur, roasted together on a low fire. The outer covering is made of milk and sooji. Similarly, pitha (in Bengali referred to as pithe) also forms a major part of festival cooking in Bengal. Some of the favourite Bengali pithes are Patisapta and Puli. Patisapta is made out of grated coconut, khoya and sugar mixed together. The outer covering is a dough made out of sooji, maida and sugar. Puli pithe is made out of mashed sweet potatoes and stuffed with roasted coconut and sugar. The Pulis are fried in oil and later dipped in sugar syrup.

Most of the indian cookbooks I have seen I would only consider making 1/2 to 3/4 of the recipies offered. In this book, I would will make most of them. If youre a vegetarian like me, this books offers mostly all vegetarian recipies. Even the meat recipies, which are few can be altered to accomodate tofu or tempeh, which is what I have done. Its really all about those incredible spice mixtures!

Curry is a fashion of cooking: a process whereby meats, fish, vegetables or even fruit are cooked in varying combinations of ground herbs and spices, (known as curry pastes), to produce a stew like dish. All dishes that are hot and spicy are not curries, nor are all curries fiery hot. Curry powder is an amalgam of some "Indian" spices best applied to the flavorings of curry dips and dishes where a hint of curry influence is desired. In a Thai curry, the proportion of solids to liquid is small. As they are always eaten over large mounds of steamed rice, just a few solids suffice and the flavour of the spicy, highly flavored gravy is extended by the bland rice. Curry pastes should be a marvelous, aromatic mixture of freshly ground herbs and spices. When preparing a curry paste, it is preferable to first use a mortar and pestle with the hard fibrous ingredients rather than including them with other ingredients in a food processor or blender. The pounding of the pestle crushes the husks and fibers releasing the oils and juices, whereas the processor and blender merely cut the spices.

Although in India today "curry" from the Tamil kaari is translated as "gravy" or "sauce," it might be better defined as "that which with rice or some other basic starch makes that starch a meal." That is, a curry is composed of a flavor-intensive sauce made of onions, ginger, garlic, yogurt, herbs, spices, etc. and, where possible, something of substance meat or seafood, eggs, vegetables, legumes...whatever one might have at hand.
