...you can count on this one. This book is filled with an expansive assortment of recipes from all cultures and cuisines. Every recipe I've made has been truly excellent, and I have a large number of the others on my "got to try that one, too" list. Finally, this book is jam-packed with pictures. Each recipe has one or more photos associated with the various steps in the recipe, but they're thorougly uselss/unnecessary. For exampple, they show nothing more than a hand stirring the broth, squeezing a lemon, or grating some pepper into the soup. However, each recipe also has a much larger photograph--many full-page-size--associated with it that shows the finished product in a bowl, poised for serving. These are a mouth-watering delight to look at. Keep your eyes out for a copy of this one.

This large format book definitely pays attention to its layout. Each recipe has not only a main photo, but also smaller photos of the steps, showing how to handle the ingredients and do certain steps. There is a quick description but most of the page is dedicated to the instructions, giving detailed instructions. I adore the photos and the detail.

However, there is no nutritional information, no prep time, no cooking time at the front. You have to sit and read through the book to get all of those details.

Also, despite the large format, the book does not lay out well. You'll need to get a weight of some sort to keep it open while you work on it.

I have mixed feelings about this one. I love the attention they gave to the photos! I just wish they carried that same dedication along to the more "practical" use of the book, making sure you could get the other details you need for a given recipe without digging out a nutrition calculator and going ingredient by ingredient through them.

If a new version came out with a flat-laying book and the nutrition and cooking information in them, that would be one I used frequently!

This small-sized book (7 1/4" x 6" x 96 pages) has me thinking that it was trying to be a mini-coffee table book.It claims to be "A fiesta of firey, flavorful recipes", but 1/3 of it is a discussion ofthe history, use, and growing of chile peppers.Now don't get me wrong, Ifound this interesting.I just wish they could have gotten more that 38recipies in it.Most of the 38 tend to be "Mexican" in flavor,which disappointed me because I really was hoping for a more"international" look at chile use.It was a good try, but not asgood as I had hoped for.It would make a good introductory book forsomeone who wants to try more spicy foods, but if you already have a cookbook in your library that covers this topic, you probably want to give thisone a miss. ... This is a very informative ENCYCLOPEDIA about peppers. If you want history, origin and facts about peppers this book will give you the information. I hoped to have more recipes in one location versus having to search for them. I gave it a 5 star because it is well written for researchers or students.

I thought this book would be more than what it was.The information is great, and really well researced, but the book itself isnt so hot.No color pictures, not enough pictures, and just really bland.I got it for a good price but that is really all I got out of it.

I purchased this book with hopes of having some detailed information and color pictures of about most of the major types of peppers out there.That is not in this book.

As a book goes, it's a fairly decent book, plenty of interesting information about peppers, recipes, information about different types, South American cultures and so on, but the photos are only black and white, and no detailed photos of peppers or plants are in the book.I think that calling it an encyclopedia was a misnomer.

I returned this book to Amazon, because there were no color pictures of any of the myriad hot peppers discussed therein.There is no real way to identify a particular type of pepper with only a black and white drawing/photo.

As someone who taught school from elementary to university level, I can say that learners, especially me, would greatly benefit by viewing color photos of the various hot peppers discussed in this publication.

This is a great chili recipe book with at least 100 recipes for chili and chili with beans. Then the book has a third section with about 100 additional recipes which use the Chile pepper as an ingredient. Your library of chili recipes will be lacking without the recipes found in this book. My advices is to get a hold of this book, add it to your library and try the recipes which appeal to you.

This recipe book is more for the kitchen sink cook. You know, find what you can around the kitchen put it in a pot and call it "Chilli" Well, I wasn't impressed. Most of the recipes didn't even appeal to me. (Uh, ketchup is never an ingredient to put into chilli for any reason....yuk!)

I have made several dishes out of this book and so far every one came out phenomenal.Some recipes are a little more labor intensive, some require some exotic ingredients, but so far none required "professional chef" skills to make.I have travelled world wide and although I am not an expert on Asian/African/Indian cuisine, I am a pretty accomplished amateur.The dishes I made tasted very authentic.

Also, hats off to Madhur Jaffrey for providing recipes for some of the perennial "pantry" ingredients such as the curry pastes and spice mixes.Many books all too often rely on your going to a store and buying the "green/red curry paste" or this or that spice mix.I find that to be a lazy way out (for the author) and pretty irritating (for the cook) particularly if you live in an area without the necessary ethnic stores to find these ingredients. ... I agree with other reviewers - great recipes for preserving your excess pods. I don't think the authors ever intended that this would be 'the definitive' guide, more a book of ideas to get you started. For the price I don't think you could find a better book anywhere covering this subject matter!

I recommend this book to anyone who is or isn't a chilehead as I'm sure both will enjoy its contents. Dave Dewitt is an excellent author who knows his subject very well.

Lots of good recipes.
Lots of good ways to store for future use.
Too generic in the use of names of the peppers which should be used in each recipe.Why use "New Mexico" or "Hot" instead of the variety you are actually proposing?
I would reccomend to anyone who is not a pepper freak...

This is a short sweet dip into the world of peppers...not a definitive work by any stretch of the imagination. It's great for a gift or for a taste of pepper mania. Believe it or not, there are those who do not have a passion for peppers--this is the book for them. However, for the serious pepper freak or gardner, I suggest Dewitt's Encyclopedia of Peppers or The Spicy Food Lover's Bible. Both are excellent resources. Dewitt is one of the world's foremost authorities on the subject of peppers so any of his more extensive works are a benefit.

I'm still trying to find the definitive pepper book, and TOO MANY PEPPERS by Dave De Witt is not that book.I began growing hot peppers this season, and would like to find a book a step up from the EDIBLE PEPPER GARDEN by Rosalind Creasy which although an interesting and colorful book with garden tips and a few recipes is not nearly comprehensive enough.DeWitt's book includes a few pages on growing peppers, but is more about what to do with peppers after you have them in hand.Unfortunately, the peppers one purchases are not nearly as fresh and good as those one can grow.

This is a nice little cookbook (less than 100 small pages), spiral bound with recipes printed on pages that will withstand splatters. The book covers freezing peppers (mash, sauce chutney, Gazpacho, stew); making powders, pastes, and sauces; smoking peppers (salsa, hot sauce, Chipotle, baked beans); pickling peppers alone or in combination with other vegetables such as squash, onions or beans; and preservation in the form of vinegars, oils, liquors, condiments such as Jalepeno Mustard and jelly and Chile butter.

I have to give the book three stars because there are no color photographs. If you can imagine Habaneros, Jalapenos, and Serranos in black and white, you get the picture. ... Read more
