Extractions: Every summer Diane Kochilas escapes to her ancestral village on the island of Ikaria , where she runs a small restaurant called Villa Thanassi with her husband, artist Vassilis Stenos. The island, a wing-shaped parcel of land named for the felled Ikarus of Greek mythology, is in the eastern Aegean, between cosmopolitan Mykonos and touristy Samos. It is a world apart, though. Ikaria is untrammeled and pristine. The village, Christos, where she has her cooking school, is on the north side of the island, nestled among pine forests overlooking the sea. Life here still moves with the unhurried, timeless rhythms of all agrarian communities. It is the perfect place to come for a truly holistic vacation, to forget about the world and immerse yourself in nature. Starting in the summer of 2003, Diane will be offering a variety of cooking classes. The classes take place in a hundred-year-old, traditional village home, which Vassilis renovated. Villa Thanassi is surrounded by the garden he plants every year, a few olive trees and much wild nature. As a result, most of the vegetables cooked in each class are organic, and guests are encouraged to help out (optional, of course!) in the extensive vegetable garden. The week begins with an introduction to Greek Food and Wine and a Welcome Dinner on Sunday evening.
